It would probably work great!  I was trying to throw together a quick dinner for us last night and got lazy.  The circles were just quicker.  Next time I need to plan better so I can salt the zucchini to get the excess water out before cooking.  I usually cut them, sprinkle 1/2 tsp of salt per zucchini and let them drain in a colander for about 1/2 hour.  I press them down every once in a while and the water (along with most of the salt) drains out. It wasn't too bad last night, but the zucchini circles definitely leached water and made it a bi****ery.

As an addition to my post. I'm dealing with a potential injury that is bumming me out big time, particularly since I have a half marathon on April 7 and another one on Mother's day.  For the past three weeks, whenever I run more than 6 miles, I get a bruise near where my foot attaches to my leg (the ankle area but directly in the front, right where the "crease" is)  It looks like the tongue of my shoe is digging into my leg.  The first week I was wearing new socks and thought they were too tight.  Last, week I put on old socks and it didn't change, so I thought maybe it was how I was sleeping and that the heel from my right foot was digging into my left, so I started to sleep with a pillow between my legs.  Didn't fix the problem as the same thing happened on saturday.  My lower leg is currently swollen and I'm sitting with an ice bag on it.  Have no idea what the problem is.  I'm hoping its something simple like I need a new pair of shoes (although the shoes I'm wearing are only 6 months old)  I'm going to try and run tonight with my old shoes and see if that helps.  Bummed out big time.

Sorry. Keep your leg elevated as much as you can. It will be easier to diagnose if you can get rid of the inflammation.

Morning all! My weekend was kinda bad. I had a lot of fun and enjoyed myself, and I drank lots of water. Unfortunately, I kinda forgot about eating :x only got in like 40 protein on sat and like 40 on sunday :/ Never would have thought I would forget to eat. I also got a charlie horse in my calf while running at the gym, so I'm making a bean soup for some extra potassium. Hope that helps. I also bought myself a nice thick rib eye steak to cook for myself once my soup is gone. I've been craving a good steak for awhile now. Please stomach, accept the delicious steak and let me eat a little of it.

B:  coffee, fig newton

S:  protein shake, cheese o's

L:  jerky

D:  bean soup

TOTALS:  Cals: 676  Protein: 83  Carbs: 39  Fat: 18

Make sure not to cook the steak too well done. The more moist it is the more likely pouch is to accept it!

I like my steaks medium so that works for me :P

What would be a thoughtful gift for someone who has been a huge support to you just out of love for you and wanting to see you succeed? 

This is a non spouse and she has simply been amazeballs!
