What's on Your Saturday Menu, RNYers?
I would like to say I made it myself, but we have a local healthy takeout place - that gives you WW points of their food and everything I bought it there. I split into two portions and added a little Ricotta for protein.
That being said I learned from Martha Stewart if you want to make a baked eggplant parmigiana you need to bake it a long time to get it tender. This is how I would do it:
Baked Eggplant Parmigiana oven 375
Slice eggplant in thin slices, longwise
In pie plate or dish mix: Carbquik (Or flour of choice/italian breadcrumbs) with salt, pepper and Italian spices
2nd dish eggs and water beaten.
Drizzle cookie sheet with olive oil, or spray with Pam Spray
Dip eggplant slices in egg and then flour mix, both sides... then lay on cookie sheet. Spray tops of slices with Pam Spray as well
Bake 20 minutes or so until nicely browned. (It will look dry)
Assembling eggplant parmigiana: (You will need, parmesan cheese, mozzarella, homemade or jarrred marinara sauce and I like a little ricotta as well)
using a glass pyrex dish
Sauce the bottom of pan then layer:
eggplant slices
parmesan, teaspoons of ricotta spread out
sauce
repeat as many layers as needed. Don't drown it with sauce but use enough esp. on final sauce layer. On top of final sauce sprinkle some shredded mozzarella cheese
Cover dish tightly with foil that has been sprayed on the inside with Pam Spray(to prevent cheese sticking)
So here is the thing that makes it taste great - need to bake for at least an hour - an hour and a half at 350.
Obviously I originally used Italian bread crumbs, now I would try carbquik with spices, or even almond flour with spices.
Hope that makes sense... I may have to make me some now.

M2: 2 chocolate covered strawberries (treats from my hubby, it's the only thing I look forward to Valentine's days four)
M3 Chile line turkey burger/ cheese
M4 meatloaf
I try not to drink protein shakes more than 2x a week. The only one that's stuck with me is the sytrax chocolate truffle. I mix it with fair life milk and add a smidgen of pb2. Yum! speaking of pb2, I finally used it and made peanut butter. It's good, very easy to whip up. I can easily adjust to using this vs the more calorie dense traditional pb... I hated the natural pb.

Nine months out:
B: 6 oz Greek yogurt with 8 fresh blackberries
S: 1 scoop Syntrax chocolate with 1 C unsweetened cashew milk and 2 t PB2
L: 1 cup chicken salad (made with plain Greek yogurt instead of mayo. Had diced apples, almonds, celery, and a few dried cranberries)

D: 2 oz salmon filet and two asparagus spears
also a quart of coffee with c. 1/3 C half and half throughout the day (my big downfall...)
kcal: 990 carbs: 94 protein: 93
Like an earlier poster, I still do protein shakes because of my low protein levels. I shoot for 100 grams a day - it's kind of hard to get that without a protein shake or bar. It also means my calories are often on the high side - but then, I'm pretty active. At any rate, I'm still losing....

Never tried Cashew Milk...how is it compared to Almond Milk?

I don't know, but you'd need really tiny fingers to milk those little suckers.

It has a more neutral taste in comparison to Almond Milk. Once I started using the Cashew Milk, I could not go back to Almond Milk because the Almond Milk just had too much of a distinct flavor.

I really like Cashew Milk, much better than Almond. I use it to mix up my protein drink sometimes now.

News on my front- the scale is finally moving again!! Yay. I didn't get to my monthly goal this month but I will just keep moving on.
Leaving early monday morning for my trip to CA. Hopefully I won't have issues with the ice that is expected.
Went to GAP today to use my style cash. Got over $300 worth of clothing for $50. Was so happy.
I also ate out for the 2nd time since my surgery. I had blackened grouper and sauteed spinach. It was sooo good!

$300 for $50 is great! I just discovered a Talbots Clearance Outlet near me and discovered all of last years styles (original prices around $100/ea) being sold for $9.99. Everything in the store was $9.99! I literally bought one of everything in my size. Ok not literally, but it felt like it! Yay for bargain shopping!
