Measure or Weigh
Scrambled eggs are relatively light and fluffy, so take up more volume. At this point you should stick to a volume limit. When your sleeve is a mature size, at 12 or 18 months, you'll be able to eat much more than you can now. Not that you always should. But eating a whole egg won't be an issue then, where it is now.
Try not to spread meal times out too long. At some point, it becomes grazing. 20 minutes or 30, maybe, should be the limit. If you eat really, really, really slowly, you could keep eating all day long.

Check with your office - but I was told to stop when you are full. 1-2 oz was it for awhile.
