My breakfast this week

I LOVES this recipe I whipped up on Sunday.  I've had it for breakfast everyday this week. I'm going to make it again this weekend.  It's really filling and so stinking good.

Spinach, bacon and mozzarella quiche with wonton wrapper crusts

6 eggs

6 strips of bacon chopped

1 cup frozen spinach

1/2 a medium onion diced

1/2 cup of shredded mozzarella (4oz by weight)

Preheat oven to 350 degrees.

Cook bacon and onions together over medium heat on the stovetop, about 4 minutes.  Meanwhile, squeeze the water from the thawed frozen spinach and then add it to the bacon and onions. coo****il onion and bacon are completely cooked through.

In a bowl, beat the eggs, and then mix in half of the shredded cheese, set aside. 

spray a muffin pan with pam, and then press a wonton wrapper into each cup to form a "crust". Spoon in 1/6 of the bacon, spinach mixture to each of the muffin cups.  Sprinkle remaining cheese on top of each muffin.

I used a muffin pan that had 6 pretty big muffin compartments.  If you have a smaller pan, you may have trouble fitting all of the egg mixture in.  You could make 12 smaller quiches out of this.  As made, each quiche is 159 calories, 11.9g protein, 6.2g of carbs and 9.3g of fat. If you made them smaller, you could cut each wonton wrapper in half and the stats would be cut in half at 80 calories, 6protein, 4.5fat, 3.1carbs.

Edit to add, bake at 350 for about 15 minutes.

Looks yummy, I make them as muffins, no wonton wrappers. But that would be a nice change. Wonton wrappers are very low calorie.

20 calories per wrapper and I felt like it gave it some substance and held everything together.  Pre surgery I used half a biscuit from the tube and less eggs.

Thanks!  I'm going to try this (getting prepared for surgery!).  One hint - I'll probably use low salt canned spinach, it has a lot less water (and mess) than draining frozen.
