How long till you could go on soft pureed foods?
I don't remember. And after a little time passes, you won't remember either. We all got anxious to move on to the next stage, so your frustration is understandable.
It's troubling that you aren't sure how long you have to wait. At this point, you should have your plan memorized forwards and backwards.
Don't jump the gun. The issue is not that your plan says 3 weeks, and someone else's plan says 2. Part of this process that really benefits us is developing some patience and discipline. We all made up our own plan that landed us in morbid obesity. It's time to hunker down and stop putting together a plan that borrows the things we like from other people's plans.
Time flies. These stages will be a blurred memory before you know it. You can stick to anything you put your mind to in the short term.

As someone that just had surgery 2 1/2 weeks ago and just today advanced to soft food, I totally understand how you feel. I found the liquid stage seemed to drag on endlessly. It can mentally drag you down, it sure did me. I found my only way to half way escape the antsies and head hunger was to drink more water. I discovered that drinking hot decaf tea was my salvation. I drank green, black, and spice teas, each filled a different void for me.
It's true that eventually the further out you get after surgery the liquid stage will seem like it flew by. In reality it didn't. In the mean time, read the info your surgeon provided, read it daily. Some, if not most, of your questions will be addressed. Your plan stages should be found in the info. No doubt about it, the full liquids stage is the most difficult but, I promise, you will get through it.
Something I wish I had discovered right after surgery, instead of 4 days before going on soft food, was jigsaw puzzles. I got 5 different puzzles, each with 500 pieces. The puzzles keep my mind occupied and hands busy so I'm not thinking about food. I had other things I could have done or was doing but they were things I was used to doing so my mind would wander (to food). This didn't happen once I took on the puzzle(s).

I had surgery on Tuesday, went full liquids Wednesday, soft pureed Saturday, all by order of my NUT. BUT... I wound up in the ER the following Tuesday thinking I had damaged my pouch. Luckily it was just irritated, and I went back to full liquids for a few days to reset.
I know the feeling of wanting to get on with it, but rushing things can really cause a lot of pain.
Next thing you know you'll be 4 months out and posting daily to the menu thread. ?
