I made a no-sugar-added pumpkin cheesecake for Christmas.  Not low calorie, and certainly not low fat, but I used splenda. It was really quite good - so much of a hit that the family ate it up.  They had their slices along with cannoli, eclairs, and fudge but I stick to the cheesecake.  I have no idea how I did that but, I did! 

Anyway, here's the recipe I used.  I skipped the crust (to cut down on carbs) and it was good even without it:

nice.. But I still would have to modify it and not use any flour (or sub taht with coconut flour) and  not use any sweetener with sugars...

when I make some desserts for me- I only share  some - because the normie would devour mine, and then eat theirs. in 7+ years post op I learned to be more selfish..

I used almond meal instead of flour, and used all splenda.  Skipped the crust.  It was surprisingly good!

Actually I have made my cheesecake recipe using a brand of sweetener called Swerve. It measures cup for cup like sugar, and I find it pretty good in baked stuff. My recipe calls for 2 TBSP of flour, which I don't have an issue with, but could be left out. I saw a cheesecake episode on Alton Brown's Good Eats... and the flour somehow has to do with the creaminess. I have forgotten to put it in and didn't notice a difference. What I find makes it really creamy is cooking it in a water bath.

mmmm... ramekins is a good idea.

I like the taste of Swerve...but my gut hates it. It has Erythritol...and most people are ok with it, but my gut hates any SA... 

I can get away with using very little of it.... Some days. 

I it is very easy to use water bath with the ramekins.. Just saying... I put a circle of parchment paper on the bottom of them so I can transfer the mini cheesecakes to another container after baking and cooling off.

We have some deserts here for my BF, and a few for me. Plus polish candies.  Ugh.. I ate a couple last night... This morning gas and headache reminds me why it was bad idea... Ugh..

Congradulations! That is a huge accomplishment. I was a huge sweets cosumer before surgery and now just 5 grams of sugar makes me sick, so I have no desire for sweets anymore. The thought of eating a cupcake makes my stomach hurt!

That's a big deal! I've spent days fighting the mental fight (Doritos for me) and it is EXHAUSTING. Way to stay strong!
