What's On Your Tuesday Menu, RNYers?
I just finished dinner, and omg. I modified Eggfaces ricotta bake. I doubled the recipe, then added 1lb of trader Joes grass fed 85/15 ground beef to the sauce and a layer of baby spinach. Baked it according to her recipe. Here's the stats:
8 servings per double recipe
Cal 237 protein 22.1 carb 5.3 fat 14.4
The only thing I would change is the spinach. I used fresh because it's what I had. I think that made it slightly watery. Next time I'll use frozen and squeeze out the water before making it.

Oh my, that looks good. I haven't made the ricotta bake in a long time, so this is definitely making an appearance on the menu this week. What size baking dish is that?
