Very sorry to hear about your mom, but so happy that she got to hold the baby--how special!

Thanks. My parents live in another state. We did bring her to visit before this. But, my mom had shingles. So she wasn't allowed to touch her, just see her from far away. She was really excited to get to hold her.

Oh, I hope you come back to this!  I just saw it.  Here's the recipe:

In a large bowl, mix together:

2 c. old fashioned oats

3 TB brown sugar

1 1/2 tsp. baking powder

1 tsp. cinnamon

1/3 c. craisins

1/4. chopped walnuts

In a smaller bowl, whisk 2 eggs w/ 1 1/2 c. milk.  Stir the wet into the dry, pour into a 8x8 pan coated with cooking spray and bake for 35-40 minutes at 375 until it's set.

I put the recipe into the calculator on MFP, and for 1/8 of the pan you're looking at 165 calories, 25 carbs, 4 fiber, 9 sugar and 6 protein.  I'm sure you could throw some protein powder in there for an extra boost; I just don't have any!
