ETA: I am thankful that I was able to see my mom this past weekend. She has terminal cancer and this was the first time she got to hold my baby. It meant the world.

Very sorry to hear about your mom, but so happy that she got to hold the baby--how special!
Oh, I hope you come back to this! I just saw it. Here's the recipe:
In a large bowl, mix together:
2 c. old fashioned oats
3 TB brown sugar
1 1/2 tsp. baking powder
1 tsp. cinnamon
1/3 c. craisins
1/4. chopped walnuts
In a smaller bowl, whisk 2 eggs w/ 1 1/2 c. milk. Stir the wet into the dry, pour into a 8x8 pan coated with cooking spray and bake for 35-40 minutes at 375 until it's set.
I put the recipe into the calculator on MFP, and for 1/8 of the pan you're looking at 165 calories, 25 carbs, 4 fiber, 9 sugar and 6 protein. I'm sure you could throw some protein powder in there for an extra boost; I just don't have any!
