What's On Your Monday Menu, RNYers?
Okay, I made the chicken ricotta meatballs last night because I didn't buy the stuff to make the chicken spanawhateveritscalled meatballs from last week. So I just did 1lb ground chicken, 1 cup of ricotta, 1/3 cup of breadcrumbs and 1 egg and seasoned them as I would a pasta sauce with garlic, onion, basil and oregano. Rolled them and lightly browned them in olive oil with finely diced onions and once they were browned dumped a can of tomato sauce in and seasoned that as well. I let it simmer for half an hour and then when it was cooled, just packed it up and put it away for this weeks lunch.
So, results are in, this was a huge success. Delicious, and the texture is really nice. I put it in myfitnesspal for the results, and I estimated 10 servings because I made 20 meatballs. here's the nutritional info per serving:

Good morning. My weekend was uneventful. After my Vegas plans fell through, I decided to pout by going into the office. So other than work and errands, I've got nothing. As for AV's question of the day, I'm really not a turtleneck lover: (1) I live in So. Cal. and while it does get cold here, it's not really THAT cold; and (2) I have a REALLY short neck (if I could figure out how to post pictures, I would post one so you all could see what I'm talking about) so, before surgery when I had a short, fat neck turtleneck sweaters were a no go. I haven't tried one since surgery, but other than losing the fat, my neck is still short so I'm probably still a no. Weird thing is I LOVE scarves and really isn't wearing a scarf with a sweater just a detached turtleneck? Hmmm, maybe I'll try one this winter.
My menu today is very red meat heavy, so it may change . . . I just HATE throwing away leftovers:

I'm just catching up. I had to take my husband to the ER at an ungodly hour. He suffers from cluster headaches and ran out of meds (cause he was taking them wrong, duh). I stayed home from work, but never went back to sleep. Did dishes, ironing, laundry and went for a run. I saw the peanuts movie this weekend...it was cute!
Turtlenecks: strangle. I can do mock necks though.
