Happy Monday.
I've been obsessing a bit, waiting for some 'magical the shoe of doom' to drop as I move past the 6 month mark. Focus of my obsession has been snacking. I give way too much thought to whats a "snack" vs. a 'meal'; or I'll say I can't eat X cause it a 'snack' food and this is a meal time etc. So in order to get my head in check I'm gonna call everything meals, and have 4 (protein focused) meals/day.
M1: Egg omelette with peppers, & cheese & 1 turkey sausage
M2: Sriracha Chicken Breast & ham wrapped around a cheese stick
M3: Salad with Chicken breast & dressing
M4: Leftovers, either beef stew or turkey breast.
Anyone start thinking about thanksgiving yet? I'm most looking forward to indulging in a slice sweet potato pie. Other wise I'm just making, turkey, greens & yams, ham and stuffing. FAR less than what I would have made in past years!!!

As for Thanksgiving, I'm getting ready. I've been experimenting with a ricotta bake with pumpkin. I made one this weekend that was just okay, but I have a few ideas to make it better. I found a recipe for Almond Flour Pie Crust and will be trying that out too.
I cook for my whole extended family, so I'll be making the basics, Turkey, Stuffing, Mashed potatoes and a veg. My mom and sis in law will bring something to fill in the blanks.

When I get home I will dig out and send you a great recipe I have for a butternut squash ricotta bake--same basic flavor and oh-so-delicious!

What an awesome NSV AV! I love it when I am reminded of all the hard work I have put into the new me! Today is my 16 month surgiversary and I am going back to basics. October was awful. I slacked on my exercise and my eating was atrocious. I have taken an oath to make it "NO CANDY NOVEMBER" and so far I'm doing great, LOL. I am definitely getting back on the tri training horse and this weekend I ordered a brand new bike!! I'm so excited I'm giddy. Its a triathlon specific bike and it is beautiful (at least to me, lol). I can't wait for it to get here!
