What's on Your Thursday Menu, RNYers?
After a lunchtime trip to Whole Foods, I have most of a menu planned out :) I had some great finds there today. I love their prepared (but raw) salmon burgers and crab cakes from the fish counter. One is about $4, and I just pan saute it up and it's my entire lunch. I also bought riced cauliflower (more expensive but it's already all ground up and I can freeze baggies of it and use some as "fried rice" along with some chicken and veggies I got to make this weekend). With a hurricane moving in to DC, I wanted to make sure I was stocked with protein. I also bought Mediterranean tuna salad from the deli - it's tuna, roasted red peppers, kalamata olives and artichokes. It doesn't have mayo and it's sooooo good.
Time Since Surgery: Almost 22 months
B: Two coffees with low fat half and half (not iced for the first time in forever, now that it's cold), 1.5 oz havarti, tiny red peppers, one hard boiled egg
L: One tequila lime salmon burger
S: Light and fit toasted coconut vanilla
D: This is a wild card - I have a huge happy hour with tons of people I used to work with
E: I did solidcore this morning - this class is literally changing my body, and I love it. 50 minutes of torture but I feel good all day.

We don't have a Whole Foods or Trader Joe's near me....its HORRIBLE and makes me sad! I did go to Trader Joe's last weekend, I was in a town anyway for a friend's get together, so I stopped in and bought some stuff! I also bough riced cauliflower....I am a person who cooks from scratch...EVERY meal...BUT this is a nice quick and easy way to get riced cauliflower
At the risk of sounding dramatic, I don't know what I would do without Trader Joe's! You cook from scratch for a family, but as someone who cooks for one, TJs is perfect for quick items for one. I am there at least once a week. Luckily, living in the city I can easily go to Trader Joe's once, Whole Foods once, and Safeway once per week - all are walking distance :)
It's not cheap but it's MUCH cheaper than eating at a restaurant. And I like eating protein forward when I can mix it up with salmon burgers, crab cakes, mediterranean tuna salad, ginger chicken, etc. Their prepared food, or prepared to be cooked food, makes it so easy and convenient for me to eat on plan :) I hope you found some good stuff there! They also have an incredible salad bar but I simply add too many things to the container and suddenly have like 12 or 16 oz of food which is obviously wasteful for us (not in the olden days though, wow when I think about the quantity of food I could put away!)
