What's on Your Thursday Menu, RNYers?
Thanks for kicking things off! Like everyone else I am hoping all is well with AV and was thinking of starting the thread, but then was too lazy to do it LOL.
I'm on the blueberry ricotta bake band wagon too! I made it last night and it was delicious. Definitely WLS delicious, maybe regular person delicious too (I couldn't tell if the beau was being nice because we're still in that stage LOL or if he really liked it). I subbed in part skim ricotta, eggbeaters and splenda and it all worked well. I loved the lemony flavor with the blueberries! I don't know how many servings it's SUPPOSED to be, but I cut mine into 8 so the stats are decent with 150 calories, 10g protein, 7 carbs, and 10g fat.
Time since surgery: 18 months
B: egg muffins and coffee
S: Kind bar, more coffee
L: chicken salad again and string cheese
S: deli ham and a babybel
D: a TJ's chile lime chicken burger
S: TJ's omega trek mix, a serving of the blueberry ricotta bake, maybe a Chobani tube (frozen, of course)
TOTALS: Calories 1266, Protein 104, Carbs 56, Fat 74
V/W: started
E: an hour with my trainer done!
PS. My dinner for the beau went over really well. I ended up roasting peppers, onions, and squash, making a nice little salad topped with goat cheese and some reserved peppers, and then cooking up some TJ's chicken sausages in the over (I got a single roll for him to eat his sausage). I did set my smoke detector off - which is hysterical because it beeps and says FIRE! FIRE! FIRE!, but that happens whenever I have the oven on over 400 degrees - no matter what, so it isn't really my fault LOL

It's SO annoying! And mine are hardwired so I can't even take out the battery for the time I'm using the oven!

My newest fav recipe is a variation I made on EggFace's Ricotta Bake. Instead, I am making it with Butternut Squash and scallions. Yum :)

OK slow day here.... Glad you are all here though. I don't know about best recipe lately, but I will tell you about my best low-carb finds. Because sometimes I just still need a carb. I buy these locally, but you can buy online. Toufayan low carb Pita (Netrition.com has it) makes a great pizza. It is 100 calories, 16 carbs, 7 fiber and 8 protein. The other is the Perfect 10 Bagel from Westernbagel.com. Online you have to spend at least $20. Even though it is more expensive to buy locally - I don't need 6 or 7 packs of bagels in my freezer. The stats are: 150 calories, 19g carbs, 10 fiber, 19 protein. Usually only eat 1/2. They both stay great in the freezer too. I just had this AM, and it is the first time I have touched it in months. I made the whole bagel because my eyes are way bigger than my stomach, but only ate 1/2.
B: Tea, !/2 low carb bagel with American Cheese melted

D: Shrimp stir-fry
S: Premier Protein Hot Chocolate
E: ?? need to get on track here - change of season... no more swimming. and today is the first day I had to wear a jacket.

B: 3/4c Fairlife skim milk, 2 scoop syntrax milk chocolate
S: Dannon L&F Greek yogurt
L: 1/2 Old Neighborhood Chinese sausage, 1/2c raw green beans with 2 tbsp Trader joe's reduced guilt spinach & kale greek yogurt dip
S: 2 Baybel cheese
D: Homemade Gyro meatballs with 0% greek yogurt Tzatziki sauce recipe here
Totals: Cals: 646 Protein: 79 Carbs: 31 Fat: 23
Do you ever try the Oikos Triple Zero Greek Yogurt? They have a bit more calories than the Dannon L&F but they pack 15g's of protein.
My local grocer carries only five flavors of the L&F. Lame.
