What's On Your Monday Menu, RNYers?
The weekend was quiet. I got restless on Saturday and went for a walk- Wound up going grocery shopping. Got some sweets for my dh, and then wound up stress eating them. *headdesk* New goal is that when stressed, to go for a walk but no shopping and/or travel to Manhattan and go swimming. Spent the rest of my time either at my homework desk or in my reading chair. I did make it to the gym on Friday, though! *nods*

It’s been such a wonderful weekend. My husband is home! It’s nice for things to get back to normal. Thought I have some crazy deadlines for work this week, and my baby brother and his girlfriend are visiting from Seattle. He hasn’t seen my little one since he was 4 months old, so it will be nice to see him. I just have to get my work done. I guess I’ll be working massive overtime today and tomorrow to try to catch up before I take Wednesday off to spend with him.
Also, I’m hosting a family dinner this weekend. I’m trying to decide what to make, since my brother and his girlfriend are vegan, and everyone else is carnivorous. I was thinking a taco bar, and adding a vegan bean dish that they can use as their protein in their tacos. I honestly don’t get the whole vegan thing, but that happened after he moved to the west coast. Go figure. J
I also got my Unjury starter pack this weekend and I have a question for Unjury users. I tried to mix a drink from the strawberry sorbet with cold water on Sunday morning for breakfast and it clumped horribly. I just used a shaker. It tasted great, but I know I didn’t get enough of the protein because it was clumped up and I couldn’t drink it all. Any suggestions?
I made a huge batch of kale chips this weekend. My husband was watching football yesterday and I tried to give them to him instead of potato chips. No go, lol. He didn’t have chips though, so that’s a start.
Food for the day:
B: Banana Cream Oikos Triple Zero Yogurt (I ate the whole thing!)small coffee one cream, triple shot of pumpkin.
L: 3oz of albacore with some Mary’s gone crackers (just a few, not a whole serving)
D: Slow cooker pot roast with a small amount of potatoes and carrots
S: Fancy cheese my husband brought home from Denmark with a few crackers and deli ham. Kale chips. Possibly a high protein snack later in the evening, depending on what time we eat dinner.
Totals (without the late snack):
Cal 695 Protein 71 carb 39 fat 34
The taco bar sounds like a perfect option - everyone can pick and choose what works for them. I'm with you on not understanding vegans LOL How does one live without cheese?!
I haven't specifically used Unjury, but I definitely found that mixing any of the powders with a small amount of room temp/tap water first, then adding in either the hot or cold water got the best result. I also sometime use a little handheld milk frother to really mix things up!

Definitely agree that the bean option in the tacos sounds perfect! *nods* I actually used to be vegan when I was a teenager for a couple of years. I was always pleased when there were beans, tofu, or veggie options without dressing!
Mmmm… kale chips? *toddles off to google*

Hi!
We just left my parents and are making the journey back home. I'm glad we got to visit with them, they are 80 and 71, with no local family near them. My mom just broke her foot too. Whatever I can do to help while I'm there I'm glad for. I did well eating wise, they respected my restrictions. I did indulge in some ice cream, I don't dump, but my tummy clearly told me I had enough after a few spoonfuls. I also tried some of my dad's pancakes (tradition since I was a kid), but they did but sit well. I have no interest in having them anytime soon.
Despite being on the road I have a menu:
Time since surgery 5 months, can't wait to get home and do my monthly progress pics.
Breakfast: 1 fried egg, 2 slices Virginia ham and 1 slice Velveeta cheese. (My parents put me on to the Velveeta, it's only 40 calories/2g fat /3g carb/3 protein, Much better than my standard cheese I was using!)
Lunch: shrimp and chicken breast (packed by my mommy :-)
Snack: grapes
Dinner: unknown, depends on how close we are to home.
It rained the entire trip, and rain is in the forecast at home too. If it rains repairs can't be done to our water and we'll still be without. please, please send sunny day vibes!

I had an okay weekend. We went looking for a new sailboat. We are selling our boat to buy a bigger one. One that my husband can work on and fix over the winter. He always has to have a project. Which he enjoys so I don't mind. I did make a nice dinner Saturday night. I made pork chops with sauteed apples and onions with cinnamon. Felt like a good fall dish. One thing I did do this weekend was I ate pizza last night. I just have to say I won't be doing that again any time soon. I was in total pain all last night with the heating pad. So I learned my lesson.
B:Ice coffee and will say my stomach really didn't want to eat this morning and I had to get blood drawn so I couldn't eat till after that.
L:Ham and eggs with some ricotta and cinnamon
D:Pork chop leftovers from the weekend
S:Hard boiled egg cheese stick
Vitamins are in water is working it's way down. Exercise will be a nice walk on the beach it is so nice out.
Have a great day.
The pork chops sound amazing. I used to sail when I was young, fun. What body of water do you live by? I have only had pizza ahandful of times since surgery, always with other people.... I have to say I did enjoy it, but it was on my menu weekly pre-surgery. Amazing how things change.

I live near the bay in New jersey. The pork chops next time I am going to use the crock pot so I will just chop up everything and put it on low and let it cook all day. Pizza I will not be eating again. I am not saying never. Not any time soon. I could have made a better choice and I would feel so much better today. It was so not worth it. It was planned on my menu. So I wasn't just throwing caution to the wind. I guess we learn lessons on the way.
