What's on Your (photo) Friday Menu, RNYers?

Welcome to Photo Friday, y'all!  I have nothing, but I look the same as I did last Friday, so use your imagination.  LOL

Anyone got anything exciting planned?  I know Nikki is IronManning so I think she wins the weekend, but who else is doing something awesome?  The weather here is supposed to be beautiful (for late September, anyway) and of course we have baseball on Sunday, but I think that's it.  Maybe I'll mow the lawn, but no other yard work will be done!  LOL  I do have a couple of low effort recipes I want to try out:  zucchini bread, baked oatmeal, General Tso's Meatballs (holla melissasue!), and this cauliflower pie recipe that's been kicking around for a while that I want to tinker with.  Exciting, n'est-ce pas?

Time since surgery:  14+ months

B:  coffee, Chobani cinnamon pear yogurt and some roasted almonds.  I'm particularly excited to try the yogurt!

L:  Leftover venison/cabbage stir fry with egg noodles and a Cabot cheese snack

D:  Sausage and cheddar frittata with a couple of roasted potato wedges.  Love breakfast for dinner.

TOTALS:  Cals:  855  Protein:  73  Carbs:  55  Fat:  40

I am doing my first 5K tomorrow. Bubblepalooza.... sort of like the color run but with bubbles. Hoping it doesn't stay in my blond hair and I end up looking like Rainbow Brite.

My photos today are for you AV - recipes and Pumpkin!

The first is Pumpkin Pancakes for dinner. - Original recipe: 1 egg, 1 scoop vanilla protein powder, 1/4 cup pumpkin, 1 tsp. vanilla. I added a dash salt, and a few dashes pumpkin pie spice. Cook low and slow. Next time I would add some sweetener to the batter. Oh and I also added about 2 TBSP milk because I like them thinner.

Then as long as I had an open can of Pumpkin I made Pumpkin Granola. Sugar free and Oil free. I used SF Maple Syrup, and Brown Sugar Truvia. (truvia is not totally sugar free) Pumpkin Granola

B: Tea, Premier Protein

L: Out shopping so Panera or Bar and water

D: More spaghetti squash and Bolognese sauce

S: out a tfriends

OMG, pumpkin granola?!  *faints*

Can you post the recipe?  I can't access that site from work and I want to make sure I get the ingredients before I go home!

I know you didnt mean for ME to get this for you....but I did it anyway....what can I say....I am pushy ;)

Ingredients:

3 cups old fashioned (rolled) oats
1 1/2 teaspoons ground cinnamon
1 teaspoon ground allspice
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/2 cup maple syrup
1/2 cup pure (unsweetened) pumpkin puree
1/4 cup applesauce
2 tablespoons brown sugar
1 1/2 teaspoons vanilla extract
1 cup dried cranberries
1/2 cup pepitas

Directions:

1. Preheat your oven to 325 degrees F. Line a rimmed baking sheet with parchment paper, or use a nonstick baking sheet.

2. Mix the dry ingredients in a large bowl (oats through salt). Mix the wet ingredients (syrup through vanilla) in a smaller bowl. Stir the wet ingredients into the dry ingredients. Then stir in the cranberries and pepitas.

3. Spread the mixture out onto your baking sheet. Bake until golden- stirring halfway through baking- 20 minutes, then stir, then bake another 20 minutes. If it's not quite golden and crisp, bake 5 to 10 minutes more. It will get crisper as it cools. Let it cool and then store it in a covered container to nibble on for a couple of weeks.

Hope you enjoy. This is the first granola recipe I saw that did not involve lots of oil.

I dont even LIKE pumpkin, but granola sounds awesome....probably just for the crunch factor.  I am still missing really crunchy foods!
