This is what I do sometimes....items needed.

Tofu (This is where you would use chicken breast)

coconut oil (2tsp)

buffalo sauce

romaine lettuce

onion

tomato

shredded cheese

Saute' protein in coconut oil until done, put buffalo sauce in a bowl put protein in and stir. In a different bowl put remaining items except cheese. Mix well, combine bowls and stir add cheese on top.

No dressing needed, the buffalo sauce is the dressing.

Angry Viking posts this all the time on the What are you eating today post-

I don't remember all the exact quantities

Mix together:

1 can chicken (large- Costco size)
6oz container plain greek yogurt
1/2 packet ranch dressing mix powder
chopped celery, chopped onion,
Crumbled Blue Cheese
Frank's Hot sauce to taste.

It is delicious, and it is the only time I like greek yogurt instead of mayo. I think it is because it has so much flavor...

Here you go! I'm not sure if this is Angry Viking's but it is one that was posted on this site.

Buffalo Chicken Salad

1 can chunk chicken breast

2 oz. reduced fat crumbled blue cheese

1/2 packet Hidden Valley Ranch

6 oz. (or one of the small tubs) of plain Greek yogurt

chopped onion/celery

Frank's Red Hot to taste

I eat it with pork rinds or celery sticks and I never get tired of it.
