What's On Your Thursday Menu, RNYers?
Hey everyone,
Here's a chili recipe that I really like:
1 tablespoon of olive oil
2 chopped onions
1/2 cup chopped green bell pepper
3-4 garlic cloves
1 tsp minced Jalapeno pepper
Your choice of 1lb lean ground beef or lean ground turkey
1 tbsp. chili powder
2 tsp ground cumin
1 tsp dried oregano
1/2 ground coriander
1 (14 1/2 oz) can diced tomatoes
1 (16 oz) can pinto or beans
1/2 tsp salt
Pinch of ground pepper
1/4 cup chopped cilantro
1) In a large nonstick Dutch oven or saucepan, heat the oil. Saute the onions, bell pepper, garlic and Jalapeno peppers until the onion is translucent. Add the beef or turkey and cook breaking it apart with a wooden spoon until no longer pink about 5-7 minutes. Stir in the chili powder, cumin, oregano and coriander; cook, stirring for 1 minute.
2) Add the tomatoes, beans, and peppers. Bring to a boil. Reduce the heat and simmer gently partially covered for 20 mins. Stir the in the cilantro and serve with a dollop of fat free sour cream .
