Today was my last prednisone for my skin! My skin looks amazing....and I am SO scared it is going to go crazy when I stop the steroid. BUT my weight went down this morning since starting it...maybe because I have only been taking 1/2 a pill for the last 5 days. Whatever, I'll take it!! yay
Hi Kristin and all!
I love that you are shopping for color! I find myself still buying a lot of black, since it looks sleek and can go with anything, but I also have been buying red and bright blue. Make yourself not buy anything black and khaki ha ha.
I have been back in the rut of eating two hard boiled eggs for breakfast almost everyday, but I do get sick of things. I agree with Susan - I don't limit my breakfast to just having breakfast food. I will chop up an onion and mix it with two cans of tuna and light mayo and eat off of that for a few days. I also love those sweet/spicy peppers from the olive bar with chunks of cheese from Trader Joes. I also sometimes like to wrap deli turkey in a piece of cheese. I was on a serious kick of Light and Fit Greek yogurt with some almonds mixed in but I find it doesn't keep me that full these days :(
Today's menu is half in the air, and does include iced coffee, hard boiled eggs, and leftover Chipotle burrito bowl (no rice, no beans, but half chicken half tofo sofritas yummy!). Dinner is up in the air. I leave on a six day business trip to Vegas tomorrow so wish me luck - there will be drinking, but I hope to eat relatively well and thank god this pouch limits quantities when my mind doesn't :)
Have a great day, all!
I love eggs...I just don't like to cook em' I mostly leave that to the DH on the weekends. LOL, so my protein coffee works for me.

1 package of cream cheese
1 cup of parm cheese
1/2 cup butter
2 cloves of garlic minced
1/2 cup fresh finely chopped parsley
1/2 cup skim fairlife milk
melt it all together over low or a double boiler (my preferred method). I prefer to add the parm and the parsley at the end. Then pour over zoodles that have been steamed and are nice and pliable. Its SOOOOO good. We started eating this years ago when we first went low carb and we must have made it 2x a week.
Ugh, I hate eggs! I can force myself to eat them, but there is ZERO enjoyment there. I did voluntarily have some yesterday when I wanted to try my egg drop soup recipe (and this time with actual eggs instead of making it fancy broth like last time since my hubby had hard-boiled all of the eggs in the house!). It was really good, and I am definitely going to use that to incorporate eggs into my diet more!

Small NSV yesterday – Went shopping at Sam’s Club and the Grocery store with my DH. We bought 100% healthy foods! It felt SO GOOD walking by all of the candy and breads and snacks and NOT buying them! We bought a few things I look forward to trying, such as Caribbean Mahi Burgers. We looked at labels together, discussed purchases, and when one of us wanted to veer off course and get something not-as-good, the other squelched it! We never get out of Sam's Club for under $200 and we did for the first time yesterday - while buying healthy! I'm positive we would have spent more than $50 in bad foods if we weren't intentionally avoiding them. I do have to say that the smell of the bread/candy isle was intoxicating!
I’m so proud of my husband, who is an avid snacker and loves his big portions. I’m a little worried that he is going to lose weight faster than I am, even after surgery! We have a small little competition going on between us on who can reach 250# first. He has a head start (He’s at 303 right now while I am at 328) so hopefully once I have surgery I will win that bet!
Is anyone else super competitive and silly stuff like that motivates you? :
