What's on your menu, Thursday?
Day 3 of the low carb challenge was my best day so far, 21g of carbs. Coincidence or not, the scale has finally moved in the right direction and showed a 1 lb loss. Here's to day 4! Hmmm, piece of advice for my younger self . . . get your weight in check earlier so you don't have to be a spectator in your own life and have the courage to do what makes you happy. If you don't like what you're doing, it is totally within your power to change it so you can find your happy place. Lessons that are harder for the older me to take to heart!
Here's the food plan (one more day at my current job and I'm trying to keep the stress in check):
B: It's bagel day at work so my breakfast is lox and cream cheese
S: Skinny Vanilla Latte
L: Grilled chicken
S: Light and Fit and PB before the gym (if my shoulder cooperates)
D: Shrimp and stir-fry veggies
Totals: Calories 837, protein 103g, Fat: 23g, Carbs 33g (yay!!)
Nikki - such a huge CONGRATS on making goal! It's an exciting feeling! A weird one too, right, since now you aren't working "towards" something. It's almost a letdown because nothing at all changes - you still have to eat the right things, exercise, etc. but think how far you have come! How small and strong you are! I hope that keeps you motivated and loving your new life :) I am so happy for you :)
If I could tell my younger self something...it would be to have RNY! I can't recommend it enough to people. When I eat chicken and get full on 3 oz I am reminded that my pouch works, and some days my pouch is the only thing stopping me from shoving my face. Despite me struggling right now (carbs too high, coming up on time of the month, stress) it's the best thing I have ever done. I still have a lot of self-loathing around why I let myself get so big I needed SURGERY, but I am working on this :)
I have been up since 5 am (traveled to Charlotte this morning for five days with family) so my calories are higher than they should be (I feel like I have already been up for three meals).
B: 3 coffees with cream, a few pita chips on the go, two hard boiled eggs and two pieces of deli turkey (this was over two breakfasts - one at 6 am and one at 9:30 am)
L: Two Trader Joe's Italian chicken sausage (not a huge fan of this flavor, hadn't had it before, too much fennel seed!) and some pieces of mango
D: Family is ordering in a Chinese smorgasbord. I will have some shrimp and chicken. Luckily I don't eat rice or noodles, generally, so aside from the sodium and fat content being off the chart, it won't be terribly awful.
E: None. Feels weird to have a "rest" day. I will go for a walk with my mom later. I am only at 5,000 steps which is not acceptable! lol

Thank you! I feel like now that I have reached this weight things will be so much harder than they ever have been. Trying to remain diligent and eating on plan is hard enough but now I have this increased pressure to remain here. I know it will always be a battle. But the good things in life are always worth working for :)
Enjoy your family time! And I am totally a 2 breakfast eater on days I wake up earlier. I do find if I eat two I'm not nearly so hungry in the late afternoon and PM.
I have found that if I don't eat a little something (protein wise) about every 3 hours that I get crazy hungry! And, not that I feel hungry... I just want to eat. It is probably low blood sugar or something. Anyway, if I don't eat little tidbits, I do crazy things like eat crackers!
So I constantly need to keep an assortment of beef jerky, string cheese, real cheese "crackers", HB eggs, etc. around so I don't go off the wagon! Most days it works.
