Woo hoo, vacation!! I am so jealous of you all that are being able to take vacays this year, even if they are stay-cays! I am going to have to have a hysterectomy, probably some time in the next few months and I am trying to save my off time for that. 

But, enjoy the waterpark!!! Please go down the biggest slide (for me)!!!

Ooooh Fun waterpark.  We are still on vacay here at the beach in NC and except for my non-swimming five year old who keeps testing his & mine limits on how deep he can get in the surf.  Its been really fun.   Their is no relaxing on this trip however.  I am really glad we programmed a rest period of two days at the end of this back at home before we return to work...

Im actually planning a waterpark tomorrow.  Its supposed to be one of the best days weather-wise and we are going to a boardwalk festival in Wilmington so that's the agenda for tomorrow. Sounds like fun to me!

Foodwise Im eating crap.  were eating mostly quick easy one pot meals made in the kitchenette in the room.  My snacks are not bad, but mealwise..., protein bars, protein coffee, etc are decent, but my best hope is after the week is over ive managed to maintain or only gained a pd or two so I can get back on routine... fingers crossed...

Yes, that sounds stressful but glad you're planning some fun stuff too!!

Eating on plan during vacation can be a struggle so continue to work it!!

Have a blast at the water park, will be so fun!  Broccoli with melted cheese is just making my mouth water for some reason, who has cravings for broccoli LOL LOL

Hey, everyone! Nikki, sorry you had a rough weekend. My weekend was so-so... I still was feeling the effect of whatever bug I had on Friday. I had a trip planned with a friend to go to her Aunt's goat farm, but wasn't able to go because I didn't want to get too far from a bathroom! LOL... I know, too much info! I was going to get some goat mik for my soap making and my husband was afraid I would come home with a goat! LOL... nothing cuter than baby goats!! Next weekend, I hope.

Carb challenge... yay!!! My menu looks pretty good (carb wise today). Keeping my fingers crossed! Kinda bummed this week because this is my weekly weigh-in and when I 1st weighed myself this morning, I was down 5 lbs!! Then, because I knew I didn't lose 5 lbs, check the scale and there was a piece of shell or something under it...  . So when I removed that, I was only down a pound. And I know, a pound is great but, it had said 5 lbs...    Oh well, next week!

My menu:

B1: Tea and Sugar Leaf

B2: 1 oz beef Jerky and 1 Frigo string cheese

L: 1 cup iceberg lettuce, 2 oz of Castle Wood Black Forest ham, 2 tablespoons of 3 cheese ranch dressing, 1 black plum

S: Hard Boiled Egg (while only), more tea and Sugar Leaf

D: 3 oz of grilled scallops with 1 tablespoon Helman's Tartar Sauce, 1/4 cup cucumbers

S: Salted Caramel Flavored Protein Ice Cream

Totals: Calories - 694, Protein - 69, Carbs - 41, Sugars - 32, Fats - 29

Vitamins/Water - Started, Exercise - Walking with my Zoey and pool time (if the weather holds)

Hey-o!!  Happy Monday you guys...blergh.  I had my 1 year follow up with my surgeon this morning and all is well!  My iron is still low but higher than it had been 3 months ago, so I hafta soldier on with my 4 ferro-sequels a day.  I'm heading to my regular doc's after work to have her check out my crazy knee rash/pain/whatever.  I feel like I'm going to the doctor all the time.  LOL

Low Carb Challenge accepted!  Usually I'm below 50 (or right around there) on a regular day, but for some reason when I was menu planning today it was so hard.  LOL  Like when I can't think of a single meat free menu option during Lent.  It's the pressure!!  Here goes:

Time since surgery:  Just under 1 year

B:  coffee

S:  34 degree rosemary crackers with 2 wedges of LC.  I was so excited to find the crackers in WalMart!

L:  Turkey pepperoni, Frigo Light cheese stick and pork rinds

S:  WATTAMELON!  I'm almost out of it and I'm so sad.  *sniff*

D:  beef and venison meatloaf with steamed green beans

S:  Friendship Fit to Go 4% cottage cheese.  I don't usually have an evening snack, but I need to up my protein!

TOTALS:  Cals:  895  Protein:  76  Carbs:  49 (whew!)  Fat:  41

I am usually no where near 50 grams of carbs which made menu planning today tremedously hard.  I feel like I am on atkins again, LOL.  I envy you that you stay so low most days.  Way to go on the 1 year appt!
