How do you construct your burger ricotta cheese thing? The ingredients sound delish!
Oh! I just pan heat the veggie burger and when it's done I use that same pan to cook my egg. While that's going, I top the burger with ricotta and plop the egg on top of that. The cheese gets all melty...and there's not a lot of food stuffs I love more than a runny egg yolk.
Hello all. As usual, I am very late to the party. The weather here is overcast, but very mild. Supposed to be in the low to mid 70s. I have a friend visiting from Seattle this weekend, so we will be running around Portland. My friend is hosting a BBQ on Saturday. One thing about BBQs is that there is always plenty of protein on the menu, so never any problem finding WLS friendly items to eat.
Below is my usual Friday selfie in the work restroom. Such a lovely location. I always have to time it right so there are no other people in the restroom so that I don't look like a total wacko.

B: Egg Beater Omelette with lite mozzarella and bacon bits
S: Light and Fit Banana Cream Greek Yogurt with PB2 (yum)
L: Turkey meatloaf and 2 tbsp mashed potatoes. I didn't eat this yesterday because I had an unexpected work lunch.

D: Portobello mushroom cap pizza

E: I have my Dad tonight, so will try to get a walk in this afternoon
