This one! It's from plainchicken, but I made a couple of modifications. It made 10 cups.
1.5 lbs chicken breast (about 3)
1 can kidney beans
2 cans Rotel
1 c. fresh corn (this was from 3 ears)
1 c. water (approx.)
1 packet ranch seasoning mix
1 TB cumin
1 TB chili powder
1 TB onion powder
8 oz. light cream cheese
Mix everything together, throw the cream cheese on top and cook on low for 6-8 hours. Then shred your chicken, stir in the cream cheese and stuff your face hole with the goodness.
I plugged this into MFP, and it came out to 231 cals for a cup with 27 grams of protein.
