can i have your peanut sauce recipe?

Yes, but I am embarrassed to post it because it's so simple --- nothing like the peanut sauce I used to slave over pre-surgery!

1 medium/large zucchini

 

Shrimp, cubed chicken or sliced beef

minced garlic and olive or coconut oil for the pan.

Sauce:

2T powdered peanut butter

1T sugar free syrup or sugar free honey.  I've also used splenda brown sugar in a pinch.

1t of Tamari soy sauce 

1/2t garlic chili paste.  I actually use more because I love spicy.

 Use a veggie spiralizer to make zucchini into "noodles".

Mix the sauce ingredients in a measuring cup or small bowl with a fork or whisk.

Heat a large fry pan with a small swirl of oil.  Quick saute the meat of choice, add the minced garlic towards the end for flavor.  Add the noodles and toss.  Add the sauce and gently combine.  I serve with crushed peanuts or crushed red pepper.

give it a try! I personally LOVE it! Its amazing to me that at one time I could easily take out a half container of Jif in one sitting, but this stuff I use such a small amount for that rich flavor!

I haven't used it for straight peanut sauces, but I add a scoop of it whenever I make Thai-style curries (with curry paste and coconut milk).  It's great!

I ordered mine from Amazon and it came in yesterday, so I tried it for the first time - OH. MY. GOD!!!  No wonder it is exploding on shelves everywhere.  Sorry I don't have any exciting recipes for it yet, but like the others, I put it in L&F Vanilla yogurt with 1/2 a small banana, and it was thick and yummy and reminded me of the filling of my favorite peanut butter pie recipe!

Anyway, after I paid way too much for it online, I learned that they have it at Sprouts (just 2 blocks from house).  I'm gonna stock up!
