I think its considered a complex carb because its made of multiple types of sugar, though I wouldn't really put it on par with a whole grain bread or vegetables..  Corn bread usually has a lot of sugar too.   I'm not 100% sure I've explained this properly.

I could be 100% wrong, but I think of it as a simple carb because it is sugar, cornmeal and sometimes, actual kernels of corn. I see corn as a grain, but a high sugar one.

I do not eat cornbread any longer, so I've not really looked into it. That's just my gut reaction.

Its still a refined starch, but I think it technically fits under the complex category.   Either way, not a very good choice IMO.

Cornbread contains both simple and complex carbohydrates.  The amounts would vary by recipe.  However, cornmeal is a complex carbohydrate so that's the predominant kind.

Complex and sugar laden and genetically modified. I make something that tastes just like it with almond and coconut flours and it's sugar free from Melissa Mcgehee's cookbook Comforting Eats. It's the first half of her stuffing recipe.

I'm sorry but most cornbread is really just corn flavored cake.  I have seen it made without gluten and sugar and with whole grains that I would eat, even though I am too lazy to make it, but most that you get in restaurants and in box mixes are full of flour and sugar.  You may as well have a slice of cake without the frosting.  I remember binging on cornbread because I convinced myself that it was "healthy".  That didn't work out well, as did none of my experiments to find a way to eat those carbs without losing control of my intake of them.

Simple would be my guess. Especially if made from a mix because most have a lot of sugar.

My "like-it meter" registers high; that usually can only mean one thing...simple carb...stay away to stay alive.
