It is not a matter of safe, really. It is a matter of how your body deals with carbs. Lots of vets here do not count carbs. I am not a vet--more a journeywoman-but I avoid most simple carbs. My carb intake is from beans, dairy, and a little fruit. I stay away from bread, rice, and pasta because those foods make me feel like crap and I eat protein forward. My carb count is generally about 80-100 a day. Your mileage may vary.
