Recipe Share - "Quesadilla"
Sharing my concoction from dinner tonight! My own Quesadilla "recipe" (really just common sense, but made bariatric friendly lol).
1/2 of 1 Aladdin low carb whole wheat wrap (55 cals., 7g carbs, 5g protein)
1/4 cup Fat Free shredded cheddar cheese (45 cals., 2g carbs, 9g protein)
3 oz. seasoned chicken breast (I seasoned it with cayenne pepper, minced garlic, pepper, a tiny bit of salt) (about 90 cals., 20g protein). I used Coleman Organic Chicken Breast Tenders (no breading, marinade, etc. just the seasonings mentioned).
1) Spray a skillet with some Pam (or use butter if you prefer)
2) Keep it at medium heat.
3) Layer the wrap with cheese, then the chicken, more cheese, fold in half to make it shaped into a Quesadilla.
4) Cook on the skillet until cheese thoroughly melted and the wrap is crispy and turns a bit brown.
5) Serve with 1 tbsp fat free sour cream (15 cals., 0g fat) and 1 tbsp Guacamole (25 cals., will vary depending on brand).
You probably won't be able to eat it all, especially if you're early out like me (I'm 3 mos out almost), I mostly just ate the chicken and the cheese and had most of the wrap leftover. So adjust your calories accordingly if you did that if you log it into OH or another site. Calorically and size wise it's kinda a lot, but very hard to finish everything anyway. I may adjust this to 2 oz. chicken in the future.

Thanks for sharing your idea. I made my own version of this last weekend and you're absolutely right--it's tasty as anything, but there was no way I could eat the whole thing. I had an organic gluten free tortilla as the base for mine. I don't know that I ate half of it. I did make a point of eating all my chicken though. I'd sauteed that with some onion and a little bit of garlic just to give it some oomph.

I have chicken thawing as we speak for tonight. Maybe I'll give it another go.

I add grilled mushrooms and onion to mine and roll it and then slice and eat a slice or two, I get 6-8 slices from each one. They warm up nicely!
