I really want to incorporate veggies into my meals while at the same time hitting my protein goals for each meal. So I think of things like Quiche (crustless) and omelets, but wanting to be creative and try something else also. What about a broccoli, low fat cheddar cheese and turkey ball or something along those lines? Then bake it at like 400 degrees. Of course I'm just pulling this out of thin air but I'm feeling creative! Suggestions/thoughts?

Those ideas sound great! The broccoli and cheese would be good with chicken too! Today I made same very moist. Stuffed peppers in the crockpot. OMG it was so good! Even the kids love it with the pepper.

The thing is I'm not sure how to prevent the ball from turning to mush with a bunch of cheese and turkey in there if I bake it lol. Any suggestions?

I would bake it like a meatloaf and throw in an egg to hold everything together.

I fight badgers with spoons.

That's a great idea, and more protein to boot, thanks!

I was on another RNY website and they were recommending a broccoli soufflé from garden lite.  I saw the ingredients and it was broccoli, cheese and egg whites.  140 calories and 11 protein.  It was in a frozen box like frozen boxes of spinach etc.  they also had a spinach soufflé but that had less protein.  I might try it next time I get,to the grocery.
