So I've been eating the same thing for the last few days for lunch (and sometimes dinner too lol). I get Pinto beans, shredded chicken breast, a lil cheese and mash them together and add a lil taco sauce and then spoon the mix into fresh spinach leaves and roll them up. Yum! It's quick and easy and though I'll admit I haven't actually added up the protein, I'd imagine it must be pretty good. Anyway, I was really happy with it so I figured some of y'all may enjoy it too

What a great idea about the spinach!  I often have plain deli meat and cheese roll-ups or wrap them in lettuce, but it never occurred to be to use spinach!

Oh I love spinach and its so much better for you than lettuce. Even before surgery I'd make spinach salads, get subs with spinach, when I made burgers at home I'd use spinach instead of lettuce!

Do you get a certain variety of spinach with larger leaves? The kind I get here is pretty small, I cannot imagine rolling anything in it, but I don't know the variety, either. It is not much larger than my homegrown basil.

Well by "roll" I mean more like a taco usually. I just get regular spinach and pick out the larger leaves (about 3in) and eat the other smaller ones as a salad. Usually 4 or 5 leaves with the mix fills me up. I'm almost 2mo out

Sounds great:)  I will save this so I can try it once I can eat regular.  Just had my surgery this past Wednesday so I need to have some ideas on good things high in protein for the future. Thanks for sharing!
