"Comfort Food Makeovers" cookbook

This is mostly for those who are in maintenance and want to be able to occasionally have some "comfort foods" but would like to have a healthier but TASTY version. (Sorry, but a number of recipes that I have tried from folks here have not, IMO, been very tasty.  They may have been HEALTHY, and they were "ok", but if it doesn't actually taste GOOD, I don't eat it.  I would rather have a smaller portion of something with a few extra calories and fat with full flavor.)  I will say, though, that both of the recipes I have tried that were Nik's were both EXCELLENT!  Her 3-cheese cauliflower and sweet and salty potato casserole are two of my new favorite foods.  I will be trying a modified version of her taco casserole this weekend (I hate squash of all kinds).

I ordered this cookbook because there were two recipes I was interested in and our local libraries didn't have it.  I have now tried three recipes from it (I don't cook much beyond preparing protein entrees, so for me that's a lot) and they have all been VERY tasty but with a significantly better nutritional profile than their original counterparts.  

Oh, if you look at the table of contents and only want one recipe, just PM me rather than buying the whole book!  kiss

"Hungry Girl" cookbooks and sparkrecipes.com both have good recipes with nutrition information included with each.

sweet and salty potato casserole sounds good, it's on NIk's page, right? or would u share the recipe please?

 

246 in Dec 2008 before banded 1/28/09 at 215 lbs, band crapped 9/09 at 170 lbs and struggled with it and regained to 203 revised to bypass on 8/1/11 and am very happy.

It is available for Kindle via Amazon, but I don't know about any other e-reader format.  Since I use a Kindle, I don't even know where to look (other than to just do a Google search) to see if it is available in another electronic format.
