Yummy breakfast recipe

This afternoon I mixed up one egg, 1/4 c. low fat cottage cheese, 4 Splendas and a dash of vanilla.  Then I put a tsp of butter and a tbsp of SF peach preserves and microwaved for 2 minutes til the egg was set.  I tell ya, that sure was yummy!

Tomorrow I will do a cinnamon and Splenda one to see if that is good!  Hmm, maybe I will do one with cocoa too since I seem to be craving chocolate tonite!  LOL

This is the kind of creative thinking that will make you successful. Instead of eating something full of fat and sugar you are creating the taste and still eating healthy. Good job

I totally just wrote that down!  What a delicious idea!  I don't think I have very many creative brain cells so I realy appreciate the idea - thanks!

LOL, I normally do not either but it was born of desperation.  It is most yummy!  I had SF blueberry preserves tonite and it was oh so good!  Be sure to cook it til the egg is done!  Hope you like it.

I'm trying to imagine it.  How would you describe the taste and texture?

Hmm... taste is like believe it or not ... a breakfast roll ... those kinds with the jelly in the center?  The texture is about that too.  You could use ricotta for a smoother texture tho honestly I do not notice the small curds in the cottage cheese.  I truly like this!  LOL
