I see Ricotta Bake on here alot and sounds yummy and I definitely plan on trying it post op. I'm just wondering if anyone has ever tried doing a blend of ricotta and cottage cheese to make it. I know alot of people mix the 2 to make lasagna so it can be done just not sure if it would taste weird in this recipe. From best I can figure using some cottage cheese would reduce calories and increase protein. What are your thoughts?

When I make lasagna, I combine cottage cheese, ricotta cheese, and mozz. cheese.  I assume it should taste fine in the ricotta bake.  Just try it and see.

I have made it with just ricotta, just cottage cheese and a mix - they were all good.

I just use cottage cheese & shredded cheese blend. Love it! I usually will throw in some grilled chicken in there too.

one of my favorites!   I use 1/2 cup cottage cheese (no ricotta) more protein and  allot less fat, and I put fresh shredded parmesan on top and bake at 375 about 10 min......yum!   I can't wait to add a little past sauce, but I cannot have tomato products until three months out.

It is just cottage cheese, ricotta or a blend of the two topped with spaghetti sauce (maybe a little parm up on top) and you can either microwave it or cook in the oven as above.  So good!

I think this will become one of my favorite foods.  Mozzerella does a number on me, so I get the mixture of shredded Italian cheeses, otherwise it seems to form a big clump in my system and I am pre-surg and cannot imagine what it would do after.

I personally don't find cottage cheese to be a very good substitute for ricotta, but many people do.  The cottage cheese has a higher water content and just doesn't take the same even with other cheese and some kind of pasta sauce added.

This is Eggface's recipe. The added egg gives it more protein and flavor.

Shelly's Baked Ricotta

8 oz of Ricotta Cheese
1/2 cup grated Parmesan
1 large Egg, beaten
1 teaspoon Italian Seasoning
salt & pepper to taste
1/2 cup Marinara Sauce
1/2 cup shredded Mozzarella Cheese

Mix ricotta cheese, parmesan, beaten egg, seasonings together and place in a oven proof dish. Pour marinara on top and top with mozzarella cheese. Bake it in the oven @ 450 for about 20-25 minutes (best) or nuke it till hot and bubbly. I usually made it first in the oven and heated the leftovers in the microwave.
