Pumpkin Chili (and food porn!)

This year I wanted to learn to make some savory pumpkin recipes, so I started with pumpkin chili. I really like this! The texture comes out very smooth and the flavors taste very gourmet even though it was super easy to make.

I CAN'T WAIT to try this recipe Nik!! YUM YUM IN MY TUM TUM!  How do you think it'd come out if I left out the meat? (Me being vegetarian and all).

Do you ever use TVP? I'd suggest rehydrating some of that and throwing it in for the protein factor. Or even tofu would work nicely. Also I didn't have time to do it with this batch but in former test batches I got even more colors in there. I diced up eggplant and different squa**** was like harvest in a bowl! And it freezes beautifully.

It's still a healthy dish without meat but just throwing out some protein ideas. Glad you like!

I used TVP for the first time last week for one of your recipes.  Such a good idea....that and I do like me some tofu! 

I think this would be a perfect meal to make on a sunday and freeze in little containers for lunch for the week!  SCORE! Thanks Nik! I can make a batch for me and a meaty batch for my man......I don't think I'll tell him bout the pumpkin though! lol

Yeah...if he's anything like my kid...

BUT he will probably notice the cinnamon. You can smell it. I liked it. So did my youngest. But it's hard to hide and I definitely think it's essential to playing up the pumpkin taste!

Well, he's not really all that picky, but he does sniff his food before he eats it....and it always suspicious.....like he thinks I've added arsenic to the ingredients and he might be able to smell it.  WEIRDO! 

After watching him sit down to a large pile of noodles with a can of chili on top, and dumping half a bottle of tobasco and topping it off with a half a bag of mexican fiesta cheese....I realized......hmmmmm, he hasn't quite jumped on the healthy bandwagon like me, since I don't really cook much since surgery.  WAKE UP CALL!  He's found the weight that I have lost...ok maybe 15-20 pounds, which is ok, because he's not all THAT BIG....but I'd just like him to be healthier....I'll sit there and watch him eat this nasty pile'o'garbage with a "EWWW YUCK" look on my face.  ::sigh:: So....I'm going to be hardcore using lots of your recipes for the next month or so (and on)...so.....THANK YOU FOR THAT!! And...if you've read this whole thing....thanks also for reading my rambling on and on. lol

Is it pureed pumpkin you used?

I might try it with the soy crumbles from Morning star, but I might also just add additional beans instead of the meat or meat substitute.

Mike eats anything, although he might be a bit hesitant if I tell him there's pumpkin in it.  I'll probably just say it 's a new chili recipe I'm trying and after he eats it and likes it then tell him there's pumpkin in there.

 Yep. They need to come up with a consistent name for pumpkin that is not pumpkin pie filling. In the recipe I went with what the can said "pure pumpkin" but no matter how I say it I always get this question.

What should I suggest to the pumpkin canners of the world? Cuz I always live in fear of a  newer person buying pie filling!
