HEY! What's for dinner?

 For me...I dunno. I'm having one of those days.

Melancholy for absolutely no reason. Stressed about things that must be subconscious because everything I'm usually stressed about is at its lowest stress level (if that makes sense). Ugh. 

S'anyway. Dinner. Not sure. I'd originally said some cottage cheese/Fiber One BUT I am sorta hankering for eggs. I love eggs. I eat far too many of them in a day. I will be that one person who has a heart problem off of eggs. They are my preferred protein source.

Here's what else I had today:

1. Sausage Egg McMuffin
2. Jimmy John's beach club unwich

Been one of those days, I haven't felt like much either.

B - turkey sausage patty

S - click protein shake

L - egg salad (didn't sit right)

D - taco casserole - now this I can't wait to eat!

I'm having grilled chicken baked with pasta sauce & cheese. Getting ready to go back into work for a second time today for some OT. I think I must hate myself or something. Lol

My husband is taking our 7 yr old to a pizza/info night for something at school. Our 4 yr old is bummed that he can't go so I am taking him and his 1 yr old sister on a Mommy date - to Target and probably Chipotle...in their jammies. :)

Other eats today:

B: Few bites of a summer sausage sandwich. I think I need to just cross it off the list for now - I've tried it a few times (keeping portion small since I know its not the best choice) but the flavor just seems more intense now and I don't quite like how it sits in my tummy. :(
L: Some chicken breast with a touch of BBQ sauce for dipping. A few apple slices with some strawberry greek yogurt for dipping.
Snack: Some cheez-its
D: Chipotle steak burrito bowl - I always get chicken but have been LOVING steak since surgery so going to try something new.

B - two yolked poached egg with ham
L - four bean and cheese nachos with melon ball sized scoop of guacamole
S - left over part of a hamburger patty with some salad

Usual fare while parked in front of the telly this evening.  Couple of SF popsicles, Triscuits, some SF candy and if it calls loudly enough from the pantry a handful of peanut M&M trail mix.  Oscar, the pouch, let's me know when I've overdone it on the trail mix..

Never, and I mean NEVER, trust a fart!!

Not real hungry today.. Oh wait I never am any more!!!

I've had half of yesterdays Burger patty with mushrooms and cheese.

Dinner... Taco soup in the crockpot. YUM!!!

TACO SOUP

 

 

Do not drain

1 Can Rotel Tomatoes With Green Peppers

1 Can diced Tomatoes

1 Can Black Beans

1 Can Pinto Beans

1 Can Kidney Beans

1 Can Yellow Corn

1 Can White Corn

1 Can Dark Red Kidney Beans

1 PKG. Dry Ranch Dressing

1 or 2 PKGS. Taco Seasoning

 Put all of the above in a Crockpot.

Brown 2 lbs ground beef, ground turkey with chopped onion

I like to use ground beef 80/20 or ground turkey or  Turkey sweet Italian sausage

Drain meat and add to Crockpot, Heat until hot.

(All day on low is great)

 

Serve with Shredded cheese, crushed up corn chips and Sour Cream. ( I skip the chips)
