What's for dinner - Wednesday!
This time next week the old ladies will get their hands on me again. I am going to work on just eating REALLY protein heavy the rest of the day to accommodate. But today not so!
Dinner...is probably going to be the same as it was yesterday: 1 egg +3 egg whites + grape tomatoes (halved) + green peppers + onion + Mexican blend cheese + salsa. Yes, I can eat all that and I do!
Later on I'll have some cottage cheese with PB2 and Fiber One (don't judge me!)
Here's what else I had today:
1. Greek Yogurt + PB2 + Fiber One (ok, maybe you CAN judge me...)
2. This cute little lunchable I made for myself (+ a nectarine):
3. Chike Protein iced coffee with about 2 oz. skim milk, water and ice
I thought I'd give my stats for the day in case anyone ever wanted to know. This is including my dinner and late night snack:
1106 calories, 31g fat, 120g carbs, 40g fiber and 120g protein.
I have about a ton of veggies that I need to use up before they go bad, including a pretty white eggplant I bought for no good reason. Maybe I will roast them and then...???

I'm having an omlette with some leftover chicken fajita filling. I'm also having some sliced homegrown tomatos.
Lunch: Spinach, tomato, sliced steak, toasted sliced almonds, Greek vinagrette dressing
Breakfast: Greek yogurt with toasted sliced almonds, blueberries and strawberries.
Snack 20 oz sugar free latte!!!! Yikes way too big of a portion!

Nik, my plan doesn't specify but when were you able to eat raw veggies comfortably. My dietician says I can try anything at this point but man, did cucumbers ever do a number on my stomach last week!
I have been trying to get out of a snacking mode I've been in too much. My plan calls for no snacks, just three meals. I'm finding that difficult, mentally, lately. Anywhoo...
Dinner is in the oven...with homemade Thanksgiving dinner being my fave meal, this feels like kind of a cheat...I have a Jenny-o Turkey loaf in the oven. I'll make some instant potatoes for the family and perhaps some peas.
B: Protein drink
L: leftover burrito bowl from Chipotle (have eaten from it twice and still have a meal or two left)
S1: Trail mix (ugh!)
S2: Chips and cheese (double ugh!)
D; turkey loaf and peas, maybe a small amt of mashed potatoes.

I find three meals a day nearly impossible to follow and it isn't even beneficial. Most diet experts say to keep blood sugar stable, keep up metabolism and curb cravings you should have small meals throughout the day. I usually eat about 6 times a day.

Lunch was some ground pork. Dinner was 2 non breaded chicken wings.
My nutritionist/dietician emailed me back a list and yes I moved on too fast! What I am eating now should be mashed or puréed. It does say veggies and fruit, so that's good. So it's back to the drawing board on cooking for me. 3 meals a day and no more.

L- 1/2 Club wrap with a small amount of ranch dressing
S- cheese stick and grapes
D- grilled pork chop and stewed squash
I did have some sf hot chocolate this afternoon to stave off the hungries.
That looks really good Nik! I was able to tolerate the tuna fish with grape tomatoes and cucumbers. So, I might be having that again soon!

I'm having a delicious low carb meal that I got from a cookbook. It's got ground and cubed pork, vegetables (carrots celery and onions), spices, and Great Northern beans. It is so good and low carb and perfect for the rainy day we have today. It made a huge crockpot of food so there will be lots of leftovers to freeze!
So far an excellent on track day for me, after a good day yesterday. Maybe I'm over the hump

Olive Garden take out. Salad with shrimp scampi for the protein. I still only have 1000 in for the day ( I did taste the spinach and artichoke dip) But I dump easily so it was only a taste.
