 Three. More. DAYS!!!!

I am so excited. I get my babiesbackbabiesbackbabiesback!!!!

Trying to contain myself.

Ok. Tonight is the gym. Then home to...???

I probably need to clean. I'm not so into cleaning lately. I mean my house isn't disgusting. Just...untidy.

Anyhoo...dinner. Peanut curry veggies and salt fish. I'll have Greek yogurt before the gym, a Click later on this evening. 

Here's what else I had today:

1. Protein Frappe
2. Subway cold cut combo on wheat
3. A handful of wasabi roasted peas
4. Grape tomatoes with lowfat parmesan peppercorn dressing

I had a chike iced coffee
turkey chili, wedge of laughing cow
cheese majic pop
and for dinner
roast pork tenderloin and green salad
  Today is the first day of the rest of my life!!

I haven't been into eating today.  I stretched my protein shake over about four hours...

Dinner tonight will be leftovers of what I concocted last night-- I have a ton of leftovers.  I blended frozen creamed spinach and mixed it with fat free ricotta.  Then I topped it with a dollop of low sugar marinara sauce and a dollop of Parmesan.  When you nuke it for a bit, you get a very satisfying puree-stage meal!

Today's other eats include the protein shake and some leftover blended canned chicken + condensed broccoli-cheese soup + fat free Greek yogurt.  (That might not sound appetizing, but it was actually pretty tasty!)

I'm feeling pretty good today.  I've been taking the bus home from the train station.  I may just walk today.

I'm making Leftover Soup. Basically, just plucking various stuff that's been sitting around, throwing it in a pot, and calling it good. I found a packet of dry broccoli cheddar soup mix leftover from my new post-op days, so I threw that in with a bag of frozen broccoli, cauli, and carrots, as well as the last of my meatballs, the last handful of ravioli in the freezer, and a can of black beans. It's sort of like a weird minestrone/italian wedding hybrid frankensoup. Whatever.


It's storming like nuts over here. Thunder, lightning, trees bent over, lights flickering, candles-burning-in-case-the-power-dies kinda storm. Ahhhh. After three months of massive drought, we need the rain.

I call that "refrigerator soup" and some of my very best soups have been made from lots of leftovers! My family loves it!

I had it lookin' all amazing, and then I turned the burner off under the pot to let it thicken. 10 minutes later, I smelled burning, went to go check, and I'd turned the stupid burner to high accidentally, not off.

Fortunately, it wasn't burnt, I caught it in time, but it's definitely a refrigerator casserole now, not a soup. Oh well. Still delicious. :)

Yum! Made my husband macaroni and cheese for dinner, so I got a little creative with my own.

I made a blanched broccoli and tomato salad dressed with a tsp. of olive oil, squeeze of lemon juice, and 1 tsp. parmesan cheese. With that I'm having 1/3 cup of leftover baked beans sauteed with 2 chopped slices of canadian bacon and red onion. I also took 1/4 cup of the mac and cheese, because it's delicious and a that little bit hits the spot.

Total nutrition - Cals: 351, Carbs 45, Protein 20, Fat 11, Fiber: 10, Iron: 25. Not a bad meal.

Nik, I'm seriously craving Subway! Not for a while though, I know!

Today...I forgot my breakfast.
Lunch: chicken salad w/ ff mayo, some cheese and dill relish
Dinner: taco meat (ground pork w/ taco seasoning & can of Campbell's cheese soup) with some cheese sprinkled on.

I'm still on "pureed" foods and these things seem to go down well.

It's been a long day and I really didn't want to cook but I did...I made Italian sausage stuffed zucchini. It's cooling off now and waiting for us to dig in!
