Cucumber Sub

 My daughter saw something on Pinterest and made it for me tonight.  She took a small cucumber and peeled it then sliced it lengthwise and put in two pieces of roast beef and a piece of cheese.  It was really good.  Had a great crunch and the cucumber made it so it was moist and didn't need anything like mayo or any other sauce.  She was so sweet, you gotta try one.  KAREN

Beef and cucumber sounds kind of gross to me, but doing that with turkey sounds good. Nice change from plain meat and cheese roll-ups or wrapped in lettuce...

 That is nice that your daughter made that for you!  I love cucumbers so I will have to try that next time we have some roast beef in the house.  :)
