What's for dinner - Monday!
Good day!! WOOT!
Up early for training at work - not exciting, but bearable. We'll see how I feel after 4 more days of it... blah I don't do dayshift!!
I wasn't able to work a schedule with my trainer, so after class I went to a group exercise class with her. It is called "Spinnerval" - Spin for 2-3 songs, then strength stations (3 today, 30 sec each, 2 rounds then back to spin - squat row with resistance band, pushup / side plank and plank tilt) the more spin, another circuit and more spin. WOW!!! I loved it! I am going to try to arrange my work schedule so I can go to this one more often!
I'll work a couple of hours and then head to my folks to help my mom to bed, then I will carry my tired carcass to bed.
B1 - Mint cookie made w/ water
B2 - click w/ skim milk
L - taco casserole, peppers w/ LC cheese, quest
S - cocoa roast almonds
Pre workout - 1Tbs peanut butter on ww deli flat
Post / Dinner - 1Tbs peanut butter on 1pc P28
Late snack / D2 - ww fajita tortilla with turkey bacon, tomato slices

Some chickeny crap my hubby is in there making. Chicken breasts with a McCormick marinade. Whichever one was in my daughter's left hand behind her back. We are an indecisive family it seems. :)
I missed yoga tonight, got off work to late to make it to my 545 class. So I changed real quick and barely made it to a 6pm Extreme Cardio class at the gym. Oh ma gah.
Death by cardio. Burpees, push up, sprints, jumping jacks, things I don't even know the name of... it was hell. I thoroughly loved it! haha!

I was happily cooking in the kitchen and realized I forgot the black beans for my taco casserole....so I put it up and tomorrow when I go to the store...it will be ready to pop in the oven! I diced up the zucchini and squash smaller this time ....more like chopped it with one of those hand held jobs....it was too chunky last time for my tastes by then end of it I was picking out the veggies...this way it will all mesh really good together. I halved everything last time and made a half size but going full version this time! :)
Veggie Soup has become one of my favorites too. I always loved it but when you start gaining the weight back....you tend to forget all the good healthy stuff that does keep you healthy!!

Dinner was out at a sports bar with hubby & a friend. I had a cheeseburger w/ a lettuce "bun". And 2 vodka & cranberries. Oops. It was a rough day. LOL
The rest of my day went like this:
Breakfast - Blood orange Chobani
Snack - Extend bar
Lunch - half of a ham & cheese wrap
Snack - Quest bar & vanilla Light & Fit greek yogurt

Day off today but spent the morning at two different docs for my annual WLS - 15 vials of blood given for test and finally released from the spine doc to exercise :)

inside of a chicken philly cheesesteak with peppers
a few sweet potato fries
Snack:
mint cookie protein shake
Dinner:
cucumber, tomato, tuna and crumbled goat cheese salad with balsamic vinegar

chicken picatta and nsa applesauce. i'm honestly surprised i ate the whole thing. usually i only make 3 oz chicken but the piece i had left was 4 oz and i didn't want a weird 1 oz piece left.
rest of what i ate today:
1. deli ham slices, slice of american cheese, grape tomatoes on a ritz cracker with some mustard
2. iced coffee protein shake
3. stupid line at the drug store making me all tempted and got a 4 pack of nutter butters. pretty much demolished those
4. the chicken and applesauce
5. string cheese and grapes
1302 cals, 95 protein.
did 33 minutes on the computerized spin class bike (once i can do a full hour on that i'll get up the courage to go to an actual class). the 3/4 mile walk (each way) to the gym and back, and weights.
oh an you reminded me my cals and protein include a tbsp of pb before bed, right now i'm too full to even think about it, we'll see what happens when the olympics are done

My hubby said tell the lady that has this site that you keep getting recipes from that I Love Her lol, since I have found this site he has never eaten so good :). Today I saw your recipe for protein-y zucchini Fritters.. we have so many zucchini from our garden that I thought hum-mm, boy they were a great success not only for my hubby but for a couple of the neighbors down the hall-- I was sharing with them all I made a lot and gave them out. I love love love these fritters. Just want to say thank you for coming up with all these healthy foods. I have never thought that you could eat like this and I love cooking all of this.. I love your site I tell everyone who tells me that food is boring I tell them not on Nik site it isn't Thank You so much :)
