PB Protein Squares ..surgiversary and more....

I was up and about real early on this my monthly surgery anniversary date ... a bright day and a Sunday at that ... I started my morning with an AWESOME run at 5:00 a.m. to the beach into the next city over and back ... 5.5 miles was the distance ran today WOOT as nimble as a gazelle with my old arse and pigeon toes I was pumped up and full of energy to run some more....

Then I made a dreaded call to home to check on my sister who was having follow-up scans done and PRAISE GOD she is responding EXCEEDINGLY WELL to her treatment and we had AWESOME NEWS within the cir****tances ... OMG we cried and laughed and I put down the phone and somersaulted and said WOOT! and WOOT and praise the Lord again and again ... as we thanked Him for our miracle so far ... it is a long way to go ... but we are going....

Wide awake now and totally energized my guys were fast asleep... so I went into the kitchen not wanting to disturb my DH who usually is the breakfast and lunch and dinner maker of the house ... I checked for the double batch of protein brownies I had made yesterday and barely managed 3 squares to note that they were ALL GONE .... my son and husband and daughter loved them too ... so I checked the cupboard and found a large bottle of vanilla whey protein powder ... I do shakes very sporadically unless I am dropping weight again as I am now ....a bit stressed I guess ... and I don't really like them ... so I got my creativity cap on and went to town .... check out this AWESOME recipe I made ... IN LESS THAN 7 MINUTES ....IT IS DELICIOUS....

PROTEIN PEANUT BUTTER SQUARES

In a large cup mix well with a spoon or utensil of choice:


1 scoop vanilla whey (or choice) protein powder
1 tablespoon peanut butter (NO OIL NEEDED FOR THIS RECIPE)
pinch of baking powder
2-3 Splenda or sweetener or choice
1/8 cup of water
1 large egg
2 tablespoons of skim or fat free milk
1 teaspoon of crushed nuts of choice

Pour mixture into a square microwave safe dish (note I used a regular plastic food container)

Nuke for 4.5 minutes

DONE!!! awesome Protein Peanut Butter Squares 

For a pictorial:

Mix the above ingredients in a cup

NUKE ON HIGH FOR 4.5 minutes

Remove from Microwave and turn upside down on plate

REPLACE THE PEANUT BUTTER WITH BLUEBERRIES OR STRAWBERRIES AND ADD VARIETY....

MY YUMMY BREAKFAST LOOKED LIKE THIS.... with a cup of a mixture of 1/2 decaf 1/2 regular Kahlua coffee and 1.5 tablespoons of FF Half and Half ... I had my own self made 5 year 6 months monthly surgery anniversary breakfast.... WOOT  ... peanut butter protein squares ... awesome plums and string cheese and could not even manage all of that in one sitting....

I crashed in the den on the daybed with my wares .... and DH walked in ... with his cam note mine is on the daybed.... and as I checked my iPad and ate my wares....

I determined to again this month celebrate my monthly surgiversary ... because I no longer have 5 co-morbidities nor impaired mobility nor shortness of breath nor do I sleep with a C-Pap ... WOOT ... and today I am 5 pounds UNDER what the heck? I am trying to maintain ... but hey I have a 5 pound cushion to play in anyway.... so I am good....

Me at 5 years 6 months post RNY ... Maintaining a 203 pounds total loss from highest recorded weight...

I will NEVER forget how far I have came ... Morbid Obesity did not make me sad ... it made me SICK literally ... I will NEVER GO BACK ... to live with obesity related diseases and pain... it is not worth it after risking my life on the operating room table .... I have much to live for ... I will embrace joy and let it happen to me!!!

Omg I forgot my big arsed fugly earrings courtesy of my DH ... a prezzie to me SIGH bless his heart ... because I was fussing about my messed up bangs and I said the shorter my hair the bigger my earrings will be ... and he tried to help me .... YIKES .... these light strobes are huge and fugly and they look like x-mas in August .... LOL ... but but but guess what? I like them LOL....

 Thanks for the peanut butter recipe, I'm going to put that in my list of things to try!  Is it cake like or fudge like in texture?

I love your big strobe earrings!  When I get my jewelry shelves back in order I'll have to show you my collection of earrings, bracelets and necklaces!  Clothes are not my only addiction haha!

 OMG I would love to see them.  I collect charm bracelets from all over the world and where I have travelled but seldom wear them and won't post them online either 'danger' .... 

I also collect FUN earring ... BIG ONES too ... LOL ... I have a chest of drawers (6) JUST FOR EARRINGS lol go figure ....

 One scoop of protein powder ... I use whey and I get 140 cals per scoop 26g protein you have to check what type of protein you are using and the calorie/carb count per scoop of YOUR BRAND...

I used 1 tablespoon of smooth peanut butter  - the peanut butter I use has 188 cals per 2 tablespoons so one tablespoon is measured at 94 cals

1 egg = 70 cals

2 tablespoon skim milk= are approximately 13 calories I rounded up to 20

water = 0 cals

3 packets Splenda 15 cals

The entire batch came to APPROXIMATELY: 339 calories
38g Protein
10g Fat (from protein powder and pb combined)
11g carbs
3g sugar (from protein powder and pb combined)

The entire batch can be divided into 4-5 servings ...it is very filling and impossible to eat all of it in one sitting .... if I divide my batch into four servings the number of calories and protein divided by four or five depending on your serving size.... each serving size of 4 will give you  84 calories 9.5 g protein .... based on the ingredients I USED...

Have fun with it ... tweak it to your taste ... it does not have to have nuts nor peanut butter ... I have done the same with blueberries and it is awesome...

It is not supposed to be spongy at all ... the mixture is thick and no****ery and the peanut butter has to be mixed in until it totally blends ... try it again with less water... no idea what could have gone wrong... some microwaves cook faster than others ... lower the time to 2.5 to 3 minutes ... that could be the problem too... do not forget the baking powder ... it is an important ingredient for it to rise...

 I may have put to much water in it. I did remember the baking powder. I wonder if the altitude here could also be the problem.
