What's for Sunday dinner?

My house is so damn HOT! But here I am...cooking. Am I crazy?

I'm actually making what I'm dubbing my "Protein-y Zucchini Fritters" (recipe forthcoming on Bariatric Foodie). I think I have even managed to find a method of making them completely vegetarian (which I am not sure why that's been such a thing for me lately...maybe I am "crossing over" or something).

Anyhoo...after I cook I am taking solace in my air-conditioned bedroom! Will prolly do Wii Fit for my activity tonight. Although I give myself credit for shaking my groove thang to Pandora this evening (set the station to The Temptations...)

Here's what else I had today:

1. Egg/bacon sammich w/ cheese on a WW Arnold Thin
2. Click/skim
3. A bag of Special K cracker chips
4. A McD's Southwest Salad (grilled) w/ SW dressing
5. 4 small SF chocolate chip cookies

 i've been good and actually stuck to my plan

breakfast - an iced vanilla protein coffee
lunch - 2 oz fresh mozzarella and sliced tomato on crackers
dinner - serving of trader joe's mini meatballs with tomato sauce and 1/4 c ricotta

have a snack of grapes and string cheese in the fridge ready to go. hoping the night time munchies don't take over, but i don't really have anything "bad" to snack on.

I'm impressed that your cooking.  I had to make the taco casserole at 9am to try to beat the heat!

I had a GREAT shopping trip today!  I used to never find bargains....but today I hit the jackpot!  Banana Republic had a sale where if you purcahsed before 1pm you got an additional 40% off reduced items.  I know, I know- Banana is usually too rich for my blood even when reduced price.  I got over $500 worth of clothes for $127!  And thanks to my co-workers who gave me $120 GC for my birthday...I spent $7!  I got a beautiful dress for my friends wedding - $22...the Trina Turk line at that!
Food-
Dinner- I ate taco casserole at 3 pm and am still stuffed.  May make a mini protein shake alter if I get hungry
Breakfast- cottage cheese and blueberries
Snack-Grande Soy Latte
One would think that fitting into clothes I couldn't have dreamed of would stop me from eating a Twix bar...NOPE...not this girl.  Bad Chris! I was suppposed to go for a run since it cooled off a bit but now it is pouring.  :(

I made a pot of chili. I had a bowl of chili and brown rice with shredded cheese and avocado. Was very good!

Have been recovering from hip replacement. (3 weeks ago) All has gone well except eating others meals. Not too bad. Yesterday I cooked boneless chic breast in the crock with herbs and chic broth. Cooled them and made chicken-almond- raisen salad. MMMM soo good. Tonight we are having crock pot pork, steamed broccoli, baked potato. Vacation this week on Lake Huron in our own cottage! We are ready for this much needed break, Cheers! Karen

Breakfast: Carnation Instant Breakfast with Skim milk
Lunch:  3 whole wheat crackers with 1 TBS Jif Natural Peanut Butter
Snack: 1ounce shaved chicken breast
Dinner: 1/2 soft taco

:)


Surgery weight:  232 lbs. / Goal: 145 lbs. Height:  5'5"     Fat? Ain't nobody got time for that.

 If you're crazy, so am I. I turned on my oven. 

Sunday's Meal Board said tonight is salisbury steak night. Fortunately, I looked at it this morning and remembered to take out a package of ground chuck to thaw. 

I made salisbury steaks - mixing a pound of extra lean ground chuck with an egg, herbed breadcrumbs, onion soup mix, and spices, flatten them into patties. Lined a baking pan with chopped fresh mushrooms and laid the patties over those. Top with sliced yellow onion. I made a gravy from ready-made gravy mixed with cream of mushroom soup and half a can of low sodium V8.  Smothered the whole pan in that and bake til tender and cooked through. So delish. 

Served that with mashed potatoes (for the kids, none for me) and rotinit pasta with broccoli, carrots, and cheese. 

I. Am. Full. 

Afternoon snack was an Atkins bar.
Lunch was a salad (heavy on edamame and egg and cheese) from the deli salad bar. 
I don't recall eating breakfast. I slept in today. :)

I took last week off of Crossfit to recover from my sinus infection. I'll be hitting it again tomorrow. :)
