What's for dinner - Thursday!!!!!!!!!
One thing I no fuh sho’. Nik has to take the bus home in sandals so I hope it doesn’t rain too bad!
Not sure what I’ll do for dinner if she can’t get down here. But I always figure something out. J
Anyhoo…here’s what else I ate today:
- ½ sandwich thin + 1 tbsp PB
- Click + skim milk
- Roast beef sammich on a sandwich thin with cheese, lettuce, tomato a little mayo
- Protein Frosty
I hope I get my Chang’s but if not, dammit, it’s been a good day already!

L: Nik's Taco Casserole... boy that one batch lasted me a long time! Perfect! Froze a bunch and I take it to work every couple of weeks. Now onto the next Nic recipe :-)
D: Not sure yet. I think I have some chicken breast in the fridge, so probably that.
I eat one egg about 4 - 5 times a week... think that's too much?
B - about 2 bites of scrambled egg
L - sliced deli ham with a FF Kraft cheddar single
snack - 5 almonds
D - made Curry chicken
Will have a Cookie Mint protein shake later to get me up to about 65 grams for today.
Nik - what is a protein frosty?
It's made of a new protein I'm reviewing called Fit Frappe. Texture AND taste of a frosty with 21g protein!

Pouchy Peach Chicken
1 boneless skinless chicken breast
2 peaches, sliced
1/4 small onion, sliced
1 handful baby petite carrots
1 tablespoon Splenda brown sugar
1 sprinkle cinnamon
Put the chicken in a foil pouch and start cooking it over the campfire (it also works on one of these outdoor George Foreman grill thingies). Let it cook for about halfway. Then open the foil pouch (careful, burned fingers hurt!) and add all the other stuff on the list. Close the pouch back up and let the chicken cook the rest of the way through.
I made this the other night over the campfire and it was SOOOO amazing. So I'm having it again. In fact, as soon as I hit Submit here, I'm going to get the fire started for dinner. (I promise to take pictures this time so I can blog about it!)
