DINNER THREAD! Whatcha eating?

Thought it was time to spice up the dinner thread title. You think? No? Well, I tried...

Anyway, boredom has officially set in. I am bored. As in BORED. I need my children back! I go home and there is nobody to talk to but the cat. And she never has anything interesting to say. I watch my soaps, cook my lousy dinner for one and go to the gym and then...nothing...

I am not built for this. I need my children. I need parent-teacher conferences. Girl Scouts meetings. I need "mom I signed you up to back 147 cupcakes for our class party tomorrow!" (Ok maybe that's a bit extreme) I. Am. BORED!!!!!!

Someone rescue me!

Ok, now that my whine & cheeze fest is over. I am thinking I might make a tuna burger for dinner instead of eating the zucchini fritters. May save the fritters for lunch. I am craving le tuna burger!

Here's what else I had today:

1. Pre-workout: oatmeal with PB
2. Breakfast: 1 egg + 2 egg whites with cheese and salsa
3. Spicy Quinoa and Tomatoes
4. I'm about to make a protein Frappe

Sigh...but who cares? I'm bored. And did I mention I'm bored?

What's on your plate tonight, folks?

Frozen meat?  Ground beef for sure.  Maybe some frozen chicken breasts.  Pork chops.  Canned chicken.

Frozen veggies.  Garden zucchini.  Canned soups.

*sigh*  It will probably be hamburger helper for the family and some concoction for me.

When all else fails, have an eggchilada:

(Now watch she says she doesn't like eggs.)

I like eggs.  I just don't like to cook them.  So there.

This is an option though.

Ooh, clicky.

Dinner will be what I have been eating on for a few days now.

I made a mix of:

Lean Ground Beef
Water chestnuts
green onion
olives
Shredded cheese
ranch packet mixed with greek yogurt (I first had "green yogurt" here. That would be a problem LOL)

I eat it cold mostly because I am a weirdo and like cold food more than hot most of the time.

This chick a while back made it at a party I went to (also sometimes made with ground turkey) and she put it in wonton cups. It is so delicious and mostly protein. I love this **** it is my crack. Especially the crunch that the water chestnuts give it. Ok, I need to stop because my mouth is watering.

I took a poll a while back. You are not a weirdo. Many of us like cold food. Me being chief among them. I rarely reheat stuff.

Yeah same here. I prefer it right out of the fridge. I have been this way forever. My pre surgery weakness was cold mac and cheese. Now it is cold meat mix LOL.
