Spicy Quinoa & Tomatoes
This is what I like to call a "starter" recipe. It gets you started toward YOUR unique recipe. I didn't add any meat or additional protein, but that doesn't mean you shouldn't! In fact, I give some suggestions for meat eaters in the post and very much need some suggestions from my vegetarian friends!

If I had to GUESS, I'd say um...about 4-ish. I ate a little bit (probably less than a half cup) the night I made it), then another half cup yesterday with my egg foo yung patty, a cup and a half today and there looks to be about another cup and half to two cups left. So 4-5(ish).
Clear as mud, right?
