Put a little mozzarella on sliced tomatoes with Italian seasoning, garlic powder, and onion powder, pop under the broiler just long enough to melt/bubble the cheese....YUM!

A laughing cow cheese wedge spread over a cold sliced tomato...

Stuffed tomatoes...

I'm not so much for mozzarella with tomato actually (gasp!). I mean every once in a while a little boconcini (sp?) yes...but I like sharper cheeses in general. Feta, asiago, sharp chedder, etc.

Blue cheese is great with tomato.  Yum.

Although I have to practice moderation because I have a pennicillin allergy and blue cheese makes the back of my throat itch if I have too much.

I still eat it though, damn stubborn nurse.
