Lasagna anyone?

 Noodle-less lasagna is not a new concept but I realized I didn't have it on MY site and that was a sin and a shame. I mean LOOK at it:

OMG! Yummmmeeeee, I'm sure it freezes well?   Definitely going to try this one soon...I've wanted lasagna for a while.    Thanks for all you do!   sherry

I freeze it using my Food Saver machine. That keeps it nice and freezer safe. But the one I make, for me at 4 years out, is enough for lunches during the week and a few dinners. I am one of those weirdos that has no problem eating the same thing over and over if I like it.

 I gotta make it. I make vegetable lasangna but use noodles and eggplant and spinach and yellow squash. Yummy grill veggies in grill pan great idea I have one. Gonna try it.

 Looks great Nik..I made a lasagna last night using wonton paper..it was so yummy! I'll try this one next!

Thank you Nik! I am home alone for the next few nights while the wife and kiddos enjoy a trip to grandmas. I think I will take this time to try ot some new stuff.

 With you being so new out, might I suggest you modify a bit?

I'd cut the ingredients in half (or even use 1/3 of the recommended stuff) and then make them in a cupcake tin. You come out with cute little mini-lasagna cups that freeze wonderfully and they are a smaller portion. With the one I made you could be eating that thing forever!
