I ended up making a spaghetti pie.  It'll be done in 10 minutes.  The bottom layer is the spaghetti "crust" (spaghetti, eggs & paremsan), middle layer of cottage cheese, then the top layer is basically ground beef & jarred tomato basil sauce (jazzed up with lots of seasonings).  Topped off with mozzarella.

RNY on 04/25/12
It was 90 degrees here in Michigan at 10:30am! It really is too hot to eat.

1. Coffee
2. Water
3. Mjadra w/carmelized onions and labne, fattoush and a bit of Hummus on a veggie stuffed grape leaf.
4. More WATER!!! it is still hot here and we do not have A/C or C/A throughout our house!!! Funny thing is that our 3 beautiful fur-babies have a 4 season room that is attached to the back of our house and they have an Air Conditioner! lol

I'm trying to use of some of the fresh veggies I have from my CSA, so tonight I needed to use up all the Chard.  I made skillet gnocchi with white beans, chard, tomatoes, garlic, onions.  I cooked a chicken breast for some protein and had the gnocchi dish as a side. very good!

Tuna salad sandwich and popcorn and brocolli. I was zumba-hungry and that was easy and protein filled plus kind of salty to help with all the sweat lost during the class.

okay, now to go get out of my still damp workout clothes, and practice piano and prep for bed. Where does the day go?

I am trying to keep from saying "I suck"

Oops. Said it.

It is now 11pm and I have no desire to break my no eating curfew, but only because I am so full. My parents went for chinese today and brought me a to go plate. Not bad stuff... beef and green pepper, beef and broccoli, some little salad shrimp and a piece of roast chicken. When I came to her room after eating my mom suggested I get a storage container to put the rest of the food in so I could have it tomorrow.
The rest of what food? I ate it all.

Sigh

I did have strawberries, blueberries, a block of dark chocolate and a Tbs of peanut butter unplanned. Calories outrageous.

Tomorrow will be a cooking marathon for me as I make, portion and freeze better foods to have as meals.

Tonight? I suck

Dinner was 1/2 cup chicken salad with cucumber "crackers". And some red cherries. And dried NSA banana chips. Yum.

Oh and we had a sub in power yoga tonight. I never take her classes because they are so... dull. My BMF said I only burned 78 calories that hour. Feels like a waste of a workout. I burned just as much in the grocery store afterwards. Argh. Frustrating.
