Dinner - Whatcha eating?

My plan for dinner was chili and a spinach salad; well that didn't happen, but it's okay. I had a ham steak, brocolli and brown rice. It was filling and good and low in calories. So I have some room in my plan for a more substantial later evening snack.

Nik, kudos to you for your stance and for having the gumption to "walk a mile in someone's shoes." I do hope you make it through the week. A couple of years ago at the U where I work, they had a discovery week (hunger in the world). One thrust was a similar low budget eating plan challenge. I did a week of low budget eating (not $1.50, but substantially reduced from my current allowance); it was illuminating. And I truly do appreciate where I live and what I have in my life moreso now. Plus it gave me a keener understanding of how blessed we truly are.

I had salmon cooked on my indoor/outdoor grill with a little bit of Taco Bell's Creamy Jalapeno sauce. It was delicious! I'll probably have fruit and ff refried beans later.

I had a nice salad with fresh curly lettuce, half a tomato, sugar snap peas, hearts of palm, purple scallion, some feta and a couple ounces of chicken.  yum!
