Dinner - Whatcha eating?

You know I feel surprisingly well for someone who only has 300 calories in her. 

:)

Today I am going home to meet the 2nd opinion A/C repair guy who sounds old as Moses and keeps calling me to ask if I called him (sigh). This is not the week to screw with me, landlord! Know that!

Anyhoo...dinner will be two fluffy eggs made sorta egg-chilada style although my poverty eating challenge (my food budget for the day is $1.50) prevents me from having cheese. I am "indulging" in 1/4 of a pathetically small onion and some garlic. 

I plan to go to bed very, very early. Although I suppose that's of no consequence since my budget doesn't allow for breakfast so...waking up will be...hell?

These are the impressions that I hoped to get from all this, although I'm sure the world's poor aren't half as diva-esque about this shizz as I'm being. I am American and privileged and I like food and can't WAIT for Saturday dammit! Besides my illustrious dinner, I had a cup of curried lentils and some cauliflower rice for lunch.

So...what's on your plate?

Oh I have NO idea - but it had better not be toast or chips and salsa!  I'll text my daughter and have her take something out of the freezer.  Prolly ground beef - any suggestions?

if you have the other ingredients, Taco Casserole is pretty easy (even I can do it lol).

Other than that I am kind of a plain Jane - if it isn't on Nik's blog I probably don't know what it is.
(in fact, I need to do another cooking for dummies thread because there is so little I DO know)

My mom does do some sort of goulash thing with ground beef, tomatoes, onions, bell pepper etc

Not much help, hey? ha!

I'm intrigued by your stuffed banana peppers. What else besides quinoa do you stuff in there?

I don't really have a recipe. I cooked quinoa in chicken broth. Mixed hamburger with sauteed onion, garlic, tops of the peppers, chili flakes, and whatever other seasonings sound good. I also make a marinara sauce with onions, garlic, tomatoes, red wine, and spices. Combine that all together with an egg or two, salt and pepper the insides of the peppers and stuff them with the mixture. I put some of the marinara sauce on the bottom of my dish, place the peppers in, then pour more sauce over the peppers. I covered the dish with tin foil and baked them at 300 til the peppers were soft and the meat is cooked.
I had leftover meat this last time and made a quinoa meatloaf that was really good just like that.

 Well today is my birthday so I'm hoping to go out to dinner with my husband..probably chinese and I'll have some broccoli beef 


other than that its been the same ole thing for me today..
B: Egg white omelet with cheddar
L: Tuna Salad 

I'll probably have a skinny cow ice cream for my birthday cake..lol

I am kind of up in the air in regards to dinner. My mom and I went Saturday and bought a LOT of fresh veggies. She cooked them today and I LOVED them. I just don't get the whole "don't eat starchy vegetables" thing, and I don't know what falls in that category. I may have some more anyway.

B - egg, turkey bacon, chicken sausage
L - fresh butterbeans, fresh corn, fresh tomato, a few fried okra;
- pre gym WW waffle with peanut butter and fresh blackberries
S - lowfat chocolate milk
- turkey pepperoni / cheese
D - was planning on shrimp/egg/cheese/pepper, but I may give in to the fresh veggies. Is that bad?
