The Fiber One brownies don't have bad stats at all. But they aren't your mama's brownie (if your mama made brownies).

I'm sorry...Fiber One Brownie Cookie.  That's the actual recipe, but instead of making them as drop cookies I have used a muffin tin and they came out soft like brownies instead of crunchy.

Not my original recipe.  I just adapted it from Betty Crocker.

Box of the Pillsbury sugar-free brownie mix
2 Cups of Fiber One orginal
1/3 c. of water
1 egg
1 tbsp of vegetable oil (or sugar free applesauce)
1 tsp vanilla
2-3 tbsps of mini chocolate chips
Pinch of cinnamon...I think the original recipe called for like 1/8 or 1/4 tsp.  I just sprinkle some in.

Preheat oven to 350.  I crush up the Fiber One a bit before adding.  Not to a powder just sort of a "granola grain" texture crush.  But that's optional.

Mix all together.  Spray your cookie sheet (or line or spray your muffin tin) Drop by rounded tablespoons and bake for 10-12 mins. 

I really just went by feel when I put them in the muffin tin.  Little more of the mix and I baked them for a few minutes longer.  Pulled one out and  tested it...gave them another couple of minutes and fed the next test one to hubby.  They were done.   

The cookies are crispy on the outside but fudgy in the middle.  The brownies are fudgy goodness.  

WARNING: This recipe can crank out a good 40 of these cookies.  Prepare to freeze or give them out.

Have you tried the bean-brownies? No flour and you can use the sweetner of choice.

I've tried black bean brownies.  I'm not sure if they are the same ones you are talking about.  They were.., interesting.  Tasty in the middle, but they had this skin/film on top that was off-putting.  I only ate the middle, and they don't last long before they start to go off.  Perhaps the high moisture?

Yea, same ones but I make mine with white beans, prefer the texture over black. Never had a film form, interesting. Not sure what would cause that. Yes, they go bad quickly if you don't keep them in the fridge or freezer.

Hmmm. white beans.  Maybe it's not so much a film, as it is a skin.  I like a nice crunchy brownie crust with a gooey center... and these lacked the "crust".  It was soft all over except the corners.

Maybe it was the recipe... care to share yours?

I'm happy to share! Let me find it and ill post it. Chocolate is a major migrane trigger for me so I don't make them often.

 I did. Hated them. The texture was just not great.
