What's for dinner - Thursday!!!!!!!!!

I made a tortilla-less chicken enchilada bake and it was so good.  I ate a smidge too much because my food scale died on me today. *cry*  I thought I did a good job eye-balling it... I was wrong.  Slightly uncomfortable. *sigh*

 Sooooo stuffed right now.  My husband is TDY to Florida right now and will be home tomorrow night.  

I had a new protein drink for breakfast - Matrix banana and cream with PB 2 and low fat milk....it was delicious.  

Snack:
Sugar free caramel latte

Lunch:
half of a Panera club salad with no dressing

Snack:
a couple of Newman's own protein pretzels and a few dry roasted nuts

Dinner:
picked up a broiled seafood platter from one of the places that sell live crab in Crofton...it was huge with a large fillet, four large scallops, three very large shrimp....a small crab ball that is way to rich for me and two fried oysters.  I ate about half and the rest of the seafood besides the crab will go into the other half of my salad tomorrow for lunch.  I saved the side dishes of  green beans with bacon and coleslaw for my husband to have this weekend.

HA Nik!! I was three hours away at my doctor's office all day, so I told my family that we were going to hit the Whole Foods buffet before we headed home. I ended up with a bit of chicken tikka masala, some grilled tofu, a bit of quinoa salad, tabouleh, some feta cheese and some roasted edamame. I ate a bit (I got a total of about 1 cup of stuff altogether-thats why I LOVE whole foods :D ) and then saved the rest for my evening snack.

PLUSSS I got about 35 bucks worth of awesome cheeses that aren't available in the little are where I live!!! YUM!

Another bonus-- my 6 year old found tofu for grilling, meatless "taco" crumbles to make vegan enchiladas tomorrow, AND a huge bag of crunchy soy nuts!!! YUMM-O I also bought her about a TON of vegan frozen dinners and little entrees to last a while, since she has decided that vegetarian stuff tastes better than meat dishes.....

 Um... dinner was a protein bar.  Then a protein shake a few hours later.  And just now I had a toasted whole grain sandwich thin with not butter spray and sf preserves.  Waiting to see if I'm going to have a hypoglycemic reaction to the carb heavy snack.  I had a fair amount of protein but it was liquid so it doesn't seem to counteract the spike.  I might be hitting the sack with a package of pb crackers at the bedside.

It's like I get this RH "aura" and I know I'm going to wake up at 2 am in a cold sweat.  Probably just the bs spike making me feel it...

Why?  I shoulda just gone to bed, but the toaster was looking at me and I had this sf strawberry preserves...

I really just feel sick now.  Ugh.
