Kelly - What do you do with the chickpeas? Just eat them or do you use them with something else?  I have a can of them and do not know what to do with them...lol

So, due to a freezer malfunction (ahem) and an overabundance of LARGE zucchini in the garden I decided to do something interesting.

When our freezer door was left open I had to cook 3 packages of chicken in the crock pot.  I took about 2 breasts worth and put it in a pan with a handful of fresh basil (snipped) and a can of fire roasted diced tomatoes (Hunts).  I added a cup of skim ricotta cheese when it was nice and warm.

Meanwhile, I sliced zucchini lengthwise (using my mandolin on the 3/8" setting).  I used one large zucchini.  It yielded 11 nice thick slices about 10 inches long.  I baked them in the oven on a sheet pan until soft.

Then I placed a good dollop of chicken mixture along each one, rolled it up and placed it in a square Pyrex baking dish.  I topped it all with another can of diced tomatoes (Hunts has some yummy versions - this one was the basil version).

I baked for half an hour, then sprinkled the top with 1/4 cup of shredded cheddar, a shake of parmesan and broiled it until brown and bubbly (about 5 minutes).

It was yummy.  I used chicken out of necessity, but it would be awesome with ground beef or ground turkey sausage.  I think next time I might do part ricotta and part cottage cheese in the mixture.

B - Nugo Slim Raspberry Truffle bar (these are AWESOME with 17g protein, 7g fiber, 180 cal, 12 net carbs, NO sugar alcohols, gluten free, NO maltitol and NO artificial sweeteners)

S - caramel apple flavored peanuts (total yum - get these at Wal-Green)

L - Greek yogurt

S - small salad

D - CORN DOG (I know, I know... been craving one of these for about 6 months... gonna see how it goes... I can eat all beef hotdogs but the jury is out about the cornbread)

S - protien shake

On a sad note... one of my favorite pre-surgery treats, the Arby-Q, is back at Arbys for a limited time... I couldn't wait to get there... I was going to eat the meat since I don't do very well with breads... it was lovey and yummy as I remembered... but about 10 minutes after I ate it I got nauseous... the same type of nausea that I get when I eat too much sugar (the sauce was way sweet). Alas... another prior yummy bites the dust... LOL...

All this talk of fresh maters and fresh mozarella and fresh basil, oy vey! I love me a caprese salad, or when I used to eat pasta, love a fresh tomato basil (uncooked) balsamic vinegar olive oil sauce over whole wheat pasta. OMG, tomatos in NH aren't harvested until late August.

B: egg/turkey sausage/banana
L: taco casserole/sauteed squash/edamame/strawberries
S: greek yogurt/NSA peaches
D: chicken salsa in a lo-carb wrap, coleslaw
S: string cheese and nuked pepperoni
S: I HAVE TO MAKE PROTEIN ICE CREAM (I'm yelling at myself!)

No water in the office building today so at least I'm getting outside (no not to pee) but to walk to a different academic building and using the facilities there! Tonight I'm going to a deep water aerobic class and then home to practice piano, eat dinner, and veg....maybe not in that order.

Last night I went to the gym (it was pouring rain) and did 3.5 miles on the treadmill (Heather inspired me to try some high intensity intervals) and a good upper body workout. I'm feeling it both in the gluts and shoulders today....but I LIKE IT!

I've been getting cherries for about a month now and the bigger ones for almost 2 weeks.  It's about to be too hot for tomatoes here, but I still have 5 plants on the shaded side of the house that should keep going for a few more months after these are gone!
