 the sauce is just WAY too thick.  I wonder if it's because i used greek yogurt instead of regular.  I need a way to thin it out.

 Do you have a can of chopped tomatoes? Use the juice from that. A little water won't hurt it, either.

 oh that's a great idea.  I have diced tomatoes around here, i'll try that.  Do you think it would taste ok with some of the diced tomatoes in there?  I don't know much about flavor profiles with curry, it's a new taste of mine

 Tomatoes and curry go very well together. I LOVE madras lentils, which is red curried tomato sauce and lentils. Mmmm.

 At some grocery stores, if you look in the ethnic section, you can usually find packages of Madras Lentils that you just dump into a pot and heat up. I like to doll it up with extra tomaroes, maybe some extra kidney beans or rice, and more herbs, but it's good as it is, too.

These are tasty.  I get them at Costco.  I just tear a slit in the top of the bag, heat and eat.  Sometimes I have leftovers... but I can eat the whole 2 serving bag if I try.

Well since I'm only 3 weeks out from my RNY I am still eating 1oz of cottage cheese and 1oz of unsweetened applesauce at most of my meals so not alot of thought has to be put in! I'm so ready to have something with a little flavor!
